I like Cherish by Ai Otsuka and I like Yuugure no Aka by Asian Kung-fu Generation. Well of course I'm in this guild silly! SO hard to choose just one. I guess my favorite would have to be the one my favorite band, access, did for D. Gray-Man. Doubt & Trust, 3rd OP.
Other close faves include both Fullmetal Alchemist animes' 4th openings, Rewrite by AKFG and Period by CHEMISTRY.

Lately I've been listening to both Fate Stay Night openings and the first Asura Cryin' opening. I don't know if it is my absolute favorite because there are so many I haven't heard. I also like the one from Ghost 07.

Besides "Haruka Kanata" by Asian Kung-Fu Generation, I also like "GO!!!" by FLOW (4th opening of Naruto).

I quite enjoy both openers of Ghost in the Shell, even if they aren't in Japanese, and also the opening of Wolf's Rain.
And pretty much anything else that comes from Yoko Kanno.
