I have to say Carmageddon, I like the idea of blowin your opponent to pieces using a rocket or ramming them into the water.

Need for Speed. I started play them when Need for Speed 3:Hot Pursuit came out and I loved the series ever since then.

Mario Kart all the way, I am sorry but nothing beats mario, shells, bananas, and all the other crazy stuff you can use. Fun stuff.
