I haven't played FF7 for the longest time so my reply will be a bit crude.
Chocobo breeding in FF7 is a bit straight forward. The basics would be you catch one then you feed it greens to increase his stats then you catch another one and do the same thing. Then you breed them. This sometimes result to a higher evolution of the chocobo. Now, slowly but surely, you try to get yourself a chocobo who can climb mountains. This will allow you to reach the chocobo guru who sells rare greens. You buy lots of Selkie. (I am not sure if it's really Selkie though) then you feed them to black chocobos. (Im not even sure if its black chocobos) When their stats are at max, breed them. You should have a high chance of getting a gold chocobo with that. Feed your gold chocobo with the best greens and now you have the best racing chocobo there is.
In the end though, there are guides in the net. xp They explain it better than I do. xd

battle scene any one have any good tips for breeding? never did it wat i did was defeat the emerald weapon in the ocean then use the materia u get to get rid of Ruby weapon make sure u have master magic for all characters i didnt do that i had one character fight the whole battle it was easy with the best summon and u shud use the item glitch with W-item it can give you 99 of any item 3nodding

None taken. It was a long time ago, I can't remember much anymore. But I missed chocobo breeding the most in that game.

Ps... a tip for when u get gold... equip the knights of the round to one person and mimic to everyone then u can just use it nonstop =]

Basically your goal is to get the golden chocobo.
Just continuosly mix breeding of all the chocobos
like river and mountain to make wateva and etc
And though this breeding you should com eout with a gold chocobo once you have 2 choco with the talents of all the other Chocobos then you mate them and you have a chance of getting a gold Chocobo.

Just go to Gamefaqs.com, go to the ps1 section. Look for FVII and then check the largest faq. That faq has a chocobo section and it's the best in all the internet.

You need to breed and 'good' and a 'great' chocobo using a carob nut. You may need to do this more than once, because it will produce either a blue or green choco each time. You need a blue and green chocobo to mate to get a black chocobo. This also requires a carob nut. Pair your black chocobo with a 'wonderful' chocobo using a Zeio nut. Racing them up to an 'S' Rank at Golden Saucer will give you better odds of good offspring.
It's a pain in the a**, but worth it. I have no respect for anyone who says they beat that game and didn't breed a goldy.

Breeding a Goldy was one of the biggest challenges. D : How can you just... skip it? I mean for bragging rights at least.
