Why do you think it's degrading? Because you're calling yourself out on all the crap you've been eating? Guess what. It is a shock at first to see the number of calories you've been eating (I say track you normal eating for a week before cutting foods out), but it's a useful tool.
It teaches you to check ALL labels before anything goes into your mouth. It also teaches you what 2000 calories is and what it should be. If you do things correctly and healthily, 2000 calories is a lot of food and you might find yourself incredibly full on some days. Especially if you up your intake of veggies. Fiber makes you fuller longer. As does whole grains. Making little but meaningful changes in your diet can make a world of difference. But you have to know what you are eating to know what to change. Hence a food diary.
As for working out, what kind of gym class is it? It's a class, so shouldn't the teacher be telling you would to do? Otherwise, in your hour, I'd do a 10 minute stretch, 30 minutes of cardio, 10 minutes of weights, and 10 minutes of cool down stretching. But that's just me, not as a teacher or physical trainer.
