I just made this about.. 45 minutes ago and I was very happy with it. I'm not big on bananas at all unless it's in like.. a smoothie or in banana bread.. but this was a quick, easy, delicious fix and I am very happy to share with all of you.
Ingredients:
4 tbs unsalted butter
3 slightly unripened bananas, sliced 1/2 inch thick crossways
1 cup heavy cream
1/2 tbs sugar
2 tbs dark rum
1 tbs honey
pinch kosher salt
4 oz semi-sweet chocolate, chopped or morsels
6 Digestive Tea cookies, or graham crackers, or Pepperidge Farm Bordeaux cookies (that's what I used)
whisk together heavy cream and sugar in a medium bowl until medium peaks, refrigerate.
Melt 3 tbs in a large skillet on medium high. Heat until it turns brown.
Add bananas in a single layer and brown one side for about one minute, flip with a spatula and brown the other side.
Add rum, honey,salt, and remaining butter and slowly stir and coat evenly. Take off heat and keep warm.
Melt chocolate in a double boiler, or in the microwave, add 2-3 tbs water to thin it to pouring consistency.
Place cookies into 6 small bowls, top with bananas, drizzle chocolate over the top and add a dollop of heavy cream. serve immediately.
