This thing is pure artery clogging, heat attack inducing evil. And it's freaking awesome! So here's the original recipe for it, and I will throw in a few suggestions to spice it up a bit as well.
SERVES 4 , 4 burgers Change to: burgers US Metric Close
Ingredients
* 2 ounces cream cheese * 1/4 cup mayonnaise * 1 cup sharp cheddar cheese, shredded * salt * cayenne (to taste) * 2 ounces pimientos, sliced, drained * 2 lbs ground chuck * salt and pepper (to taste) * 4 slices onions (1/4-inch think) * 4 kaiser rolls, split, toasted * 12 slices bacon, thick sliced, cooked * green leaf lettuce * tomato, sliced
Directions
1. 1 Preheat grill to medium-high. 2. 2 Process the cream cheese, mayo, cheddar, and seasonings for the Pimiento Cheese. Add Pimientos, pulse to combine. 3. 3 Shape ground chuck into eight 4-oz. portions on wax paper. Press each portion into a 4" patty using a fork, then season with salt and pepper. 4. 4 Top 4 patties with a slice of onion. Cover with remaining patties, seal edges with a fork, and season again. Grill burgers on an oiled grate for 4 minutes; flip, and cook 2 minutes more. 5. 5 Spoon 1/4 cup Pimiento Cheese on each burger, grill 2 minutes longer. Serve on kaiser rolls with bacon, lettuce, and tomato.
Ok so there's that. Now, if you all are a fan of spicy food, or just want a little more flavor, I would suggest using a chipotle mayo in the cheese, and if you can't find that, get regular mayo, and mix in some chipotle hot sauce, such at chalula, or whatever your preference may be. 2 tbs should do it, but depending on how much you like heat, a little more couldn't hurt.
We've also added Hatch green chillies from the fine state of New Mexico into the mix since everyone in my family is addicted to those things. These things are ginormous just so you know, it's quite a mouthful.
Be patient in cooking it too, since it's such a thick burger and it's two patties with an onion in between em.. even if you flip it you're technically only cooking one side of two patties (if that makes any sense). I keep my grill on low, it cooks a little slower BUT! it also won't burn the outside of the meat.
Anyway, hope you all get a chance to make this and spread the evil throughout the land. These things have become legendary around here since I started making them at a couple of family gatherings. Enjoy!

Tell you what, I've been cooking up a storm as of late. (impressing the girlfriend) I made some stuffed sopapillas last night, as well as strawberry shortcake with a white chocolate whipped cream. Mucho delicioso!
