Most people I know who have animal crossing get tired and say, "Hmm... This game is getting boring," and then they stop playing, but really, how long of a break do people take?
I stop playing for about 5 months or more.

The longest I've taken was about two months. I'd still get on about once a week to check stuff out, but that'd be about it. After a while it does get sort of monotanous...
I stopped mainly over the winter when there weren't any bugs out or any good fish to catch. I think when the snow left is when I got excited about it again. xd

Agreed.
Winter is so boring. I only catch the tiny fish.

I stopped for a month or two once, but I felt guilty and was worried Bob would move, so I play just about every night still.

I don't take a break, I'm very fond of day skipping ^.^
But I need to let this winter pass normally so I can get the darn dung beetle DX

A few years back, I played every day consecutively for over a year and a half, to maintain my precious flower gardens. After that long while, I said to myself "Self, don't let this game run your entire life!!" and stopped playing. For a year.
I played again on New Years Eve of 2007 to watch the countdown. All of my flowers had vanished, which depressed me. They were the work of literally over a year of effort.
Instead of letting it get me down, though, I said to myself, "Self, this is your chance to make your gardens even bigger and better and more beautiful!!" My previous gardens were not well-organized, but now I've arranged them in ways that are both aesthetically appealing and producing multiple hybrids.
...So I've been playing every day again since New Year's.
Not sure how long this pattern will continue, but it's kinda fun because it reflects true nature. You know, the cycle of building up life, then sudden devastation, and then the recreation of a better life.
Maybe I'm thinking into it too deeply.

I just picked it up again this week. I didn't play for the entire school year because I got too busy. D: But since I've picked it up again, I've barely put it down.

I think that AC is only fun if you play it with other people so if there is no one else to play with then I usually take breaks of a few months.

Hydrofluoric Acid I just picked it up again this week. I didn't play for the entire school year because I got too busy. D: But since I've picked it up again, I've barely put it down. Same here. I just started playing again once the school year was over.

On the gamecube version:
According to Mint, I was gone for 85 weeks. It was kinda funny, 'cause she said: "How long has it been? About 85 weeks? Did you take a vacation?"
85 week vacations sound fun, I have to say.
On Wild World:
I've taken breaks ranging from three months to about ten months.
