I love to eat heartily, and with some real food, but knowing how much strain college puts on a student, I fear I'll be relegated to Top Ramen and pizza every night. There must be a way for good meals to be had, on a tight budget, and what I wanna know, is how it can be done. Anyone got some tips, or advice, for the shoestring chef?

This is one I've used time and time again.

I go to the Dollar Tree and get noodles, Italian dressing and maybe a can of spaghetti sauce.

I either boil the noodles and eat them with hot sauce, or boil the noodles, rinse them, add Italian Dressing and put it in the fridge. It makes an easy pasta salad.

dont forget rice! rice is cheap and it gives you endless choices on how to make it.
if you have some sort of market nearby; go there to do your shopping; specially for vegetables...season fruit and vegetables will help on your budget.

you can make the spaguetti sauce better and cheap if you put half tomato soup and half fresh tomatoes, it will cut down the budget. Buy spices.... if you can get them fresh, dry them on the sun for storage wink Spices will pretty much get you out of trouble. Curry is my favorite spice, because you dont really need much, a teaspoon or two to make enough curry sauce for two people, it goes well with rice, chicken, fish and seafood... i specially recommend it with chicken and rice.

You can make a lot with little money I am a single mom raising 4 kids, i know what it's like to stretch a dollar.

Cheap Menu:
Cheese enchiladas with refried beans
Beef Stew
Chicken a la king
Pita bread pizzas (place toppings on pita and bake at 350F till cheese is melted)
And if you aren't very culinary there is nothing wrong with hamburger helper or tuna helper.

Potatoes, rice, and pastas are the most versatile and cheapest routes to go. My fave thing to do tho when I was in school is get ramen and spice it up different ways. I would get the flavor (beef, chk, shrimp) and boil the water and add a can of tomato sauce, a chopped up half of a tomato, 1 Tbls. of bacon bits (or fresh bacon) and 2 Tbls. of paprika(or to your taste), 1 Tbls. of garlic. and then when boiling toss in ramen. The other one is make shrimp ramen buy a cheap bag of salad shrimp boil water add ramen and shrimp cook then add a lil teriaki sauce and a pinch of ginger. Make a cup of white rice. fry it in some vegi-oil with 2tbls. of yellow curry, 1 egg, and 1Tbls. of soysauce. Can even combine the shrimp ramen and throw it over the rice.
