Shiny Gligar I wanna make truffles but my mom wont buy baker's chocolate. :c I might just have to settle for making lemon meringue, but I made that last year. D: You can use any bag of chocolate chips to make truffles. You don't have to use Baker's. Hershey chips will work just fine. You can even use white chips and add flavoring. My favorite is raspberry flavoring with white chips and coconut covering. I also love to use the Hershey cinnamon chips with a chocolate powder covering when I can find the cinnamon chips. Ghirardelli makes a good chocolate for truffles too. Wilton suggests using their candy melts but the Candy melts can be replaced with any flavored chips. They have a Gingerbread truffle recipe I want to try out:
http://www.wilton.com/recipe/Gingerbread-Truffles
They also have eggnog truffles that look nummy:
http://www.wilton.com/recipe/Eggnog-Truffles
There is also a recipe that uses condensed milk instead of whipping cream. They are a bit sweeter but very good. 18oz/3 cups of chips to 1 (14oz) can of sweetened condensed milk. Melt together and mix well and chill for about two hours until firm and then form balls (imagines all the 'ball' jokes). Chocolate or colored sprinkles are great for decorating them and give them a professional finish.
In a pinch you can use almond or vanilla bark too in a pinch. Although in my opinion those are not as nice as using real chocolate and vanilla chips.
I made peanut butter truffles this year using the peanut butter chips with the whipping cream recipe. I covered half in chocolate and the other half in white chocolate (they are the blue and brown balls with the snowflake on top in the photos). They turned out pretty good.
Simple truffle recipes but very good despite the simple.
