Please don't use the word hermaphrodite, it is called intersex. It isn't possible for humans to be a hermaphrodite.
Anyways, as someone who has an intersex condition, I wouldn't even want to share that on FB, they would know my name and that fact would be open to everyone not just people I want to know. Seems it could be really risky and wouldn't feel safe and people where I live are dangerous enough. I am also most likely demisexual (not quite asexual but need a connect with someone first), panromantic.
That is probably one reason why they don't have that option. If they put other where you state you identify on FB, there is a possibility others might not take it well. People don't just have friends on there, but often family and co-works, etc....
Though I posted something on my FB before and have I a few friends who are open about their identity and orientation and most seem supportive and most know I have serious health issues (including PCOS, Hypothyroid and CAH which I explained and post links to about that and intersex), but most the people on there are fellow belly dancers I see and work with (all female) and though if serious, my teacher would allow male students/intersex or anyone if they are serious about learning... and most are very nice, many may be uncomfortable about that and might feel even more so if I shared everything to all the dancers.
Maybe they should have that option for the people that want or have the option of only allowing the people you want to know to see that info, but beware there might be risks involved if you aren't open to everyone or people on there might not be supportive. Personally I think FB asks too many personal questions and I keep info hidden in general.

You can always think of it this way;
the people who choose to actually get to know you on Facebook (know you in person or in a personal manner) will understand who and/or "what" you are in regards to gender and even sexuality. That is, if they even care about any of that, then they'll certainly ask for clarification.
As for everyone else on Facebook who either doesn't care enough to ask or is too ignorant or self-consumed, well then they needn't any explanation as to your gender identity because ultimately it won't matter to them and it wouldn't be worth explaining.
Generally speaking, the American population is not exposed to any sort of 3rd gender/alternative gender identities nor are they particularly informed on sexuality. All in all, it's a complete lack and failure to educate people. Adding alternative options for gender on Facebook would just be over the heads of the majority of users. Now I'm not saying only the masses should be catered to but as far as extra options it's safe to say that only a very VERY select minority of would actually be properly educated enough to know what they even mean.
So, with all that said, this isn't necessarily a matter of inequality and blatant shunning of those who identify with alternative genders, I would just think that it's plain old obliviousness.
In due time, though, I'm sure, just as with the recent updates for the sexuality and relationship statuses on Facebook, the gender category will also catch up.

They are both completely male and female and can breed with each other but intersex, each condition is different and though some can have kids, we arn't completely both male and female, but more of a mix. Maybe one appears to be female or male on the outside but on the side, maybe their reproduction organs are incomplete or different or they have over or under production of sex hormones. My case is that on the outside I look female (I had hormone therapy, estrogen to help out but quit the hormone therapy earlier this year because I wasn't happy with it.), but on the inside, my endocrine system seems to be different and produces more androgen's, such as testosterone and it inferring with my reproductive organs to the point I don't even have periods on my own most of the time). I have PCOS but most likely have Congenital Andrenal Hyperplasia (late onset/non-classical) which untreated, causes PCOS and other problems. It's genetic, so either one parent has it or both are carries. I believe my mom is borderline. We both fit the symptoms, but the problem is finding a real good doctor. I know my androgen levels are really high, like 3x more and don't seem to be producing progesterone, which is mainly a female hormone and does a lot. Also the hormones are that are supposed to stimulate follicles don't (I have to take another blood test to check all those hormones once again) . Boys and girls could have it, but it is only considered an intersex condition with people with xx chromosomes. Actually my mom was preparing to have a baby boy, she didn't expect me to be a girl and my body doesn't function like girls are supposed. She actually doesn't mind buying me boys clothing or binding at times. It's a weird family situation. I can't breed with people with the same condition that also have the same chromosomes (also xx), so we aren't Hermaphrodites. You will often see Transgender and intersex together and many transgender may technically have intersex conditions not know it, but not all are intersex and not all intersex people consider themselves transgender. This is why people want intersex and trans separately. Though studies show that many XX (girls) that have PCOS and CAH (congenital Adrenal hyperplaisa) are more like to be transgender, lesbians or bisexual. Cisgender straight can have those conditions well, but seems to be higher with trans, lesbians and bis, most likely because the male hormones. Many also seem to have some masculine traits. Each case is different and their are still debates going on. A true hermapherdite is a being that has both fully male and fully female functioning sexual organs. It just doesn't happen in humans, because genetically and hormonally our sexual organs develop from the same material and we don't have the ability to switch how they work later in life, so humans are intersexed and not hermaphredites. It is a matter of inequality even if it isn't a matter of "blatant shunning" of other people- that's not a sound argument because I don't need people to burn crosses on my yard for them to discriminate against me because of my race, and that kind of obliviousness only works when no one speaks up- since people have spoken up and nothing has changed, then it isn't a matter of obliviousness anymore.
