Hmmm...I like having ham, cheesy potato casserole, strawberry pretzel salad, rolls, peas, and pumpkin pie. I'll have to get the cheesy potato casserole and strawberry pretzel salad recipes from my mom so I can post them. They're both really yummy and fairly easy. I always use the recipe on the cans of Libby's pumpkin (pure pumpkin not pumpkin pie filling) for my pumpkin pies.

What sort of food allergies are we dealing with? Does anyone have any religious prohibitions against any types of foods? Are there any foods that individuals will specifically not eat?

No one is allergic to anything as far as I know. Milk tends to give some of the family members a bit of gas, but my father, lil bro, and I really like milk. No religious things I know of unless someone suddenly converted without telling me. And if they are that picky, they don't have to eat the dish. 3nodding That is how I've trained my lil bro and that is how my cousins are going to have to deal with me. Partly because of that tricky lil language barrier... sweatdrop

Well last year before hubby left we had a YUMMY dinner of lobster tails. We aren't big turkey eaters, so duck is always a hit here too.

If you want a traditional dinner, go with baked ham... I suggest a honey glaze with walnuts, rolls tend to work well, garlic and 3 cheese mashed potatoes, a casserole of veggies, usually beans, is a great way to round it out. Bread-pudding is a tastey dessert, especially with cinnamon.
For additional items to flesh this base skeleton, find what fruits and veggies people like best. An appetizer plate of crackers, cheeses, sausages and mustard usually works well, as do carrot and celery dips... especially if it looks like it will take awhile for the food to get prepped.
Finally, throw a little taste of home in... much of my family has German leanings, so we have sauerkraut and sausage with or before dinner. 3nodding

Ham with pineapple glaze is a nice dish for winter holidays.
I can't remember the exact recipe, but it's got crushed pineapple, brown sugar, and the juice from a jar of maraschino cherries. Then when everything's all cooked you put a pineapple ring or two on top, with a cherry in the center.
My mom and I also always make sure to eat any cherries in the jar no longer covered by juice once it's been poured >_> <_< Bweheheh
