For fish designs, you do some on themes: beach/summer theme, holiday theme, cosmic theme. Or make customs to match avis.

I'm not sure of what holidays are during the summer except 4th of July

(I'm planning on only keeping the aquariums around for the summer months..June,July,August...Maybbee September but I'll probably take them down towards the beginning of September...unless they're super popular and people really seem to like them...then maybe I'll open a separate shop for them)

Custom fishies for avis might be a bit too much work for me XD

I can't think of any other holidays either. You could do flags of other countries, though I'm not sure how well they'd sell.
Yeah, you're right about the custom ones. You could always do food fish, like chocolate fish, lemon meringue fish, even Goldfish cracker fish! If they do get popular, you could do a bunch of seasonal ones. (I love snowflake items personally, lol.)
You can design the fish based on other animals (lion fish, duck fish, etc) or even Gaia fish (watermeat, outlaw wolf) or items (gogh reed pose, summer gardener, etc).
