ohmygod I'm happy to see vegan recipes on here. I'm tired of living in the dorms being vegan with nothing to really eat or make myself!

I don't believe the jell-o recipes are vegan, especially since jello contains gelatin, which is made from boiled animal bones and tendons.

If you ever come across the direct name of the product itself, that'd be helpful since Jell-o generally sold contains gelatin, which is not vegan. It's too careless to include jell-o in the recipe if the vegan one is so uncommonly sold or unspecified in the recipe itself.

I'm sure it's doable, it just wouldn't have a sufficient amount of shelf-life to be commercialized and sold. sad But I'll definitely be on the lookout for such a thing now!
This page is awesome! Its doing wonders to help fill out my college-cookbook. I'll leave a couple of the things I like to make behind in return.


VAGUELY ASIAN SINGLE SERVING EGG SALAD

Difficulty level: heart

You need:
Stove, hot plate, bunsen burner, some method of boiling water
Pot
Bowl
Knife
Fork
Eggs
Celery or Pickles (your choice
Mayonnaise
Onion Salt
Garlic Powder
Garam Masala
Curry Powder
Red Chili Flakes

Hard boil several eggs in the pot (I usually boil several so I have eggs on hand for a few days.) Peel one egg, place in bowl, and mash it thoroughly with your fork. Add mayo to the egg, and mix until you have the texture you like. Add your celery or pickles, chopped into small chunks, and mix. Then add:
A small dash of garlic powder
A small dash of onion salt
A small dash of garam masala (if you don't have this on hand, feel free to leave it out)
A large dash of curry powder
And finally, several huge dollops of red chili flakes.

Wait, you say, that much chili flakes? That sounds spicy! But here's the secret: it's not! And I'll tell you why.

It all boils down to the mayonnaise. Mayo, even 'lite' mayo, is basically fat is sauce form. And fat it the substance that most efficiently gets rid of capsaicins, the chemical compound that makes pepper spicy. (this is why drinking high-fat beverages like milk actually works for getting rid of the dreaded spice-mouth). Since you have all that mayo in your salad, you're going to need to add a lot of pepper before you can even taste it, much less make it very spicy. It's also good to bear this in mind when you make and serve other spicy foods; you should also serve your super-hot chicken wings with a fatty food like milk or avocado, so you or your guests have a method of escape if needed.

So don't be afraid to get adventurous with your spices! All the same, it's a good idea to taste your mixture frequently to make sure you don't add too much of one thing or another and wind up egg salad you'll never eat.


This amount of salad makes one sandwich, or can be eaten as-is.
This one might be a little hard, but I make it all the time and I can barely boil water, so it can't be that bad, right? sweatdrop
CHICKEN KATSU (JAPANESE FRIED CHICKEN CUTLET)

Difficulty: stressed stressed

Stove or hot plate
frying pan
knife
meat pounder
cutting board
several bowls
several plates
paper towels
fork
tongs
boneless chicken breasts
eggs
flour
salt
pepper
panko or other bread crumbs
vegetable oil
plastic baggies (optional, use if you intend to freeze some chicken for later)


Procedure:
Cut any extra skin or gristle off your chicken breasts, and halve them. Now, pound each breast until it's about half an inch thick. (this is important! It makes your chicken cook evenly!)

In three different bowls, prepare flour mixed with salt and pepper, beaten eggs, and your bread crumbs.

Now, dredge each breast in this order: flour, egg mixture, and then the bread crumbs.

When all your chicken is coated, heat 1 cup of oil in your frying pan. When the oil is hot, add your chicken breasts. (it's best to do them 1 or 2 at a time)

Wait until one side of the breast is golden brown, and then flip it over and continue cooking for another 3 minutes. (you should flip the chicken periodically to make sure it doesn't burn)

Lay out paper towels on a plate or cookie sheet, and place the cooked chicken on the paper towels. The towels should absorb some of the oil. (if you happen to have a cooling rack, the best way to do this is actually to put the cook rack above your paper towels and put the chicken there, but you can do this without the rack, too)

Slice horizontally and eat with your favorite dipping sauce!

You can also freeze this recipe: Wait until the chicken has cooled ENTIRELY. THIS IS IMPORTANT. When you're certain t's cool, put each portion in an individual plastic baggie, and toss it in your freezer. That way, you can grab a single serving out whenever you need, and reheat it in your oven or toaster oven.


Goes great with rice or potato croquettes.

Well, the recipe list here isn't being updated anymore, but the thread can still be used for some discussion, and hopefully keeping this thread alive gives the guild a chance to attract new members. ^^ People really should get in the guild once they have found this thread, though.

Having never cooked with meat (I'm a vegetarian), it's proving to be a lifesaver, seeing how my boyfriend is a poor and lazy college student, and I've been making him dinner. xD
