Mitolo Wines was formed in 2000 right after Frank Mitolo made a decision to increase on early efforts and commercialise his manufacturing. Through the winemaking companies of Ben Glaetzer a (also a spouse in the small business) remarkably large regular has been accomplished from the outset. Fermentation is finished in mostly French oak (new) in which the wines are subsequently aged for up to 16 months. 3 differing Shirazes are notable for their depth, extract and detailed, complex fruit expressions. The fullest demonstration of fruit and terroir is revealed in the possibly exceptional McLaren Vale Savitar Shiraz. All must be given at least five years’ age. Jester is a 2nd-label Shiraz with fantastic berryish McLaren Vale character. It is interesting but of some substance also. Initially generated in 2002 is Serpico, a Cabernet Sauvignon created from grapes dried on racks. It is incredibly concentrated and effective but balanced with black plum and black cherry fruit and avoids any overt raisiny character. Jester rosé from Sangiovese is a gutsy but effectively-balanced illustration and is now complemented by Jester Vermentino white. All the wines come complete with a Mitolo Vineyard Latin inscription which sheds some light on their names.
