Summer is hitting us once again and even harder than ever I may add xp The heat got to me so much that it inspired me to search for recipes that involved cool drinks. What I came up with was none othe than Mocktails!
Yep, thats right mocktails 3nodding For those of you who dont know what these cool drinks are, they are a non-alcoholic version of a cocktail and boy do they look yummy! I am so itching to try some for myself!
Here are some recipes of some mocktails that I found interesting mrgreen Im going to go try some of these out asap and perhaps even make 'em for a special occasion wink ........................................................................................................................................
>Berry Patch:
>Ingredients: *2 oz. blueberries *2 oz. raspberries *2 oz. strawberries *2 scoops vanilla ice cream *1/2 cup milk
>Mixing Instructions *In a blender, combine 2 scoops of vanilla ice cream with 2 oz. of blueberries and 2 oz. rasberries and 2 oz. strawberries and 1/2 cup milk. Blend and strain into a tumbler or martini glass. Sprinkle with fresh berries.

>Ingredients: *4 to 6 oz. Schweppes ® Ginger Ale *1 oz. grenadine *1 oz. lime juice *Maraschino cherry *Orange slice
>Mixing Instructions *Pour ingredients over ice in a tall glass. Granish with cherry and orange slice.
>Berry Sweetheart
>Ingredients: *3 oz red cranberry juice *3 oz apple juice *1 oz honey *maraschino cherry for garnish
>Mixing Instructions: *Fill a highball glass with ice cubes. *Add the juices and honey to a mixing glass. *Stir the ingredients with a barspoon. *Pour the contents of the mixing glass into the highball glass. *Garnish with a maraschino cherry.
>Peach Fuzz
>Ingredients: *1 cup peach daiquiri mix *1 (12 ounce) can 7-up *2 tablespoons lemon juice
>Mixing Instructions: *Add ingredients and ice cubes. *Blend on high for 15 seconds.

I was surfing the net one day and came across a picture of this very yummy looking cake. Here I present to you: The Chocolate Motherlode Cake!
This chocolate delicacy was created by a Californian restaurant called the "Claim Jumper" The cake is made up of six layers with each slice weighing 3 pounds! O.O
I couldnt believe it when I actually found a recipe for it! Im definitely going to have fun giving this recipe a try :3

~~~~~~~~~~~~~~~~~~~~~ The Chocolate Motherlode Cake: ~~~~~~~~~~~~~~~~~~~~~
Ingredients :
*6 eggs *3 cups of granulated sugar *6 tbl of butter softened *3 cups of vegetable oil *1 1/2 cups of unsweetened cocoa powder *1 1/2 cups of buttermilk *3 tsp of vanilla extract *6 3/4 cups of flour *4 1/2 tsp of baking powder *4 1/2 tsp of baking soda *3/4 tsp of salt *3 cups of boiling water *3 cups of chocolate chips divided
CHOCOLATE GANACHE FROSTING: ----------------------------------------- *1 lb of fine-quality semisweet chocolate such as Callebaut *1 cup of heavy cream *2 tbl of sugar *2 tbl of light corn syrup *1/4 cup of unsalted butter - (1/2 stick)
Method :
* Preheat oven to 350 degrees.
* Put eggs, sugar, butter, oil, cocoa powder, buttermilk and vanilla extract into a mixing bowl, mixing well after each addition.
* Sift flour, baking powder, baking soda and salt, and add to the wet ingredients.
* Fold in the water. Pour equally into 6 (8-inch) baking pans and add 1/2 cup chocolate chips into each pan. Bake for 25 minutes.
* Cool. Wrap and place the cake rounds in the freezer. Remove and ice the rounds with Chocolate Ganache Frosting.
* For the Chocolate Ganache Frosting: Finely chop chocolate. In a 1 1/2- to 2-quart saucepan bring cream, sugar, and corn syrup to a boil over moderately-low heat, whisking until sugar is dissolved. Remove pan from heat and add chocolate, whisking until chocolate is melted. Cut butter into pieces and add to frosting, whisking until smooth.
* Transfer frosting to a bowl and cool, stirring occasionally, until spreadable (depending on chocolate used, it may be necessary to chill frosting to spreadable consistency).
* Spread frosting between cake layers and over top and sides.
* Cake keeps, covered and chilled, 3 days. Im sorry for my absence. Me and my mom are planing to move this week and I was too occupied with packing things @.@
This picture really caught my eye today.
This yummy looking delight is called Chocolate Honey Toast although it looks more like a type of cake to me o.O
So I got the idea to try to use pound cake instead!
Here is a substitute recipe that I managed to dig up :3 ..........................................................................................................................................................................................................................................
~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Toasted Pound Cake with Vanilla Ice Cream and Chocolate-Honey Sauce ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ 8 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped 1/2 cup (1 stick) unsalted butter 3 tablespoons honey 1 (12-ounce) pound cake, cut into 12 slices 1/3 cup Grand Marnier or other orange liqueur Vanilla ice cream 1/2 cup coarsely chopped toasted pecans 2 1/2 teaspoons grated orange peel
Stir chocolate, butter and honey in top of double boiler set over simmering water until melted and smooth. (Sauce can be prepared 3 days ahead. Cool completely. Cover and refrigerate. Stir in top of double boiler until heated through before using.)
Working in batches, toast pound cake slices in electric toaster or on barbecue grill until golden. Generously brush both sides of cake slices with liqueur. Cut cake slices diagonally in half, forming triangles.
Drizzle warm chocolate-honey sauce on plates. Scoop ice cream atop sauce. Place 3 cake triangles on each plate. Sprinkle with pecans and orange peel and serve.
