Shtriga, which I'm surprised no one else did, are witches in Albanian Folklor that steal a person's Life force, or spiritus vitea. It was on the episode 'Something Wicked' in season 1.
In Supernatural, the witch stole the life force from children, causeing them to go into a coma. It would take it from them while they slept and then move through the families.
The reason for the children is because, supposedly, they have more spiritus vitea than adults. This may, or may not be because children, being younger, have more life left in them than adults.
Belief in the shtriga stayed constant until the 1900's, when it seemed to die. At least, not as many were mentioned in that time period. Increased popularity of these spirits are from Supernatural fans, actually. (We are good for something!)
A Brittish traveler by the name of Edith Durham recorded different ways to protect yourself from Shtriga, including a cross made of pig bone at the entrance of a church on Easter Sunday. This, supposedly, trapped any shtriga inside of the building where it could be killed.
Another way she desribed was to follow the shtriga. After it drank the spiritus vitea, it would go into the woods and throw up the blood. If you take a coin and soak it in this blood, then wrap it in cloth, it would permanatly protect you from the shtriga.
But, like all supernatural folklore, this has it's holes and empty places. And there was the fact I seemed to find absolutely no solid information, besides in wikipedia. Feel free to add things.

I think you may have forgotten to include that the Shtriga, like many other predetors(in a sense), can be wounded while it is consuming the child's lifeforce. In Supernatural, Dean said iron rounds did perfectly fine against a Shtriga(when feeding), but I did not read much about it.
