I'm new here, and so am pretty much feeling the place out still, but I saw the announcement for the recipe contest and thought it'd be fun to try.
These cupcakes should almost be called Chocolate More-Than-Enough Cupcakes. They are rich in high quality chocolate and densely divine, and one is, definately, more than enough. smile
Chocolate Enough Cupcakes
Batter:
4 oz chocolate (Callebaut or Giuttard), bittersweet
4 oz butter
3/4 cup sugar
1/2 cup all purpose flour
1/4 tsp salt
2 eggs
1 tsp vanilla extract
Chocolate Glaze:
4 oz chocolate (Callebaut or Giuttard), bittersweet
2 oz butter
1 Tb corn syrup
1/4 cup heavy cream
White and milk chocolate shavings or curls
-Preheat oven to 325 degrees F. Butter eight muffin cups, or line them with cupcake papers.
For the Batter:
-Melt together the chocolate and the butter
-Sift together the sugar, flour, and salt into a bowl. Make a well in the center and add the eggs. Stir them with a whisk and gradually stir in the dry mixture.
-Add the melted butter chocolate and butter, the vanilla, and stir to mix well. Do not beat the batter, just mix to incorporate.
-Sppon the batter into the muffin cups so that they are 3/4 full, and bake for 20 minutes until puffed and done.
For the Glaze:
-Melt all ingrediants together over a water bath and stir until smooth.
-When the cupcakes are cool, dip them in the glaze to coat the tops.
-If desired, decorate the tops with curls or shavings of white and/or milk chocolate
