Oy this is an alomst dead guild! What is everyone making for dinner tonight? Feel free to post recipe!
Vege Spaghetti Bolognese makes about 6 servings I created this to get my twins to eat some vegetables when they hit the picky toddler stage.
1 lb. ground turkey or beef 2 tablespoons olive oil 1 medium onion 1 large zuccini 1 large carrot 2 ribs of celery 1 tablespoon dried parsley 1 teaspoon dried basil 1/2 teaspoon thyme 1 1/2 - 2 cups chicken broth 2 tablespoons tomato paste
In a food processor, shred onion, zuccini, carrot and celery. Heat olive oil in a large frying pan on high and add ground turkey. Saute for about 3 minutes, just long enough to break up the meat, then add shredded vegetables. When vegetables are soft, add the herbs and cook until fragrant. Pour in the chicken broth and tomato paste and bring to a boil. Reduce heat and simmer for about 20 minutes. Serve over spaghetti or other pasta shape of your choice. I've also done this vegetarian style replacing the meat with frozen vegetarian crumbles and using vegetable broth. I always double or triple the recipe because it freezes so well.

Tonight my mom and I made home-made green beans with prosciutto ham and onions, zuchinni & yellow squash casserole, Hickory marinated pork chops, sunshine cornbread, and strawberry shortcake. Quite the feast for only three people.
