I can't seem to ever make the icing on the cake turn out right! Does anyone have any recipes they are willing to share? Just simple lemon/chocolate/white/butter or whatever. smile

Sushii doesn't really use a recipe, she just mixes the ingredients up and tastes every now and then to see how much more sugar/butter/cream cheese I should use. Frosting/icing is pretty basic, you only need two or three ingredients.
For a butter frosting, you need unsalted butter and icing sugar. The best way to make it is to use an egg beater instead of a food processor, because egg beaters tend to make it fluffier. You need quite a lot of sugar.. Anyway, first you cream the butter so it's smooth and pale. Then you pour in sugar little at a time, and always have a taste every now and then to make sure you're getting it right. If you want a flavored frosting, you can either use some cocoa if you want it chocolate (If you want it to really taste like chocolate, the best thing to use is swiss dark cocoa). You add the flavoring at the same time as the sugar so it mixes properly. If you want it something like vanilla, strawberry or lemon, you can either use flavored sugar (which also contains colour) or flavoring essence. Usually, you'd need a few drops of food colouring as well, since essence tends to be colourless. Also, mind that flacoring essence is concentrated, so don't use too much of it. If you use food colouring, It looks best if you only use a little to give the icing a light colour in stead of making the colour too strong, I personally think that it looks better that way at least. When applying the frosting to the cake, make sure that the cake is cool or the frosting will just melt.
For cream cheese frosting, you replace the butter with cream cheese and use a fork to mix instead of an egg beater. The recipe is basically the same, except you don't use flavorings since it tastes rather odd mixed with the cream cheese. Add a few drops of lemon juice to the cream cheese frosting as well, but not too much.

I have never EVER been a fan of icing... I'm more of a whipped cream kind of person as for cakes.
