This Recipie is a tad spicy, so people with a low heat tolerancy might not like it sweatdrop
Blackened Spicy Chicken
Ingredients: 6 skinless bonless chicken breast portions 6 bsp butter or margarine 1 tsp garlic powder 2 tsp onion powder 1 tsp cayenne pepper 2 tsp sweet paprike (I just used paprika, turned out fine) 1 1/2 tsp of salt 1/2 tsp ground white pepper 1 tsp ground black pepper 1/4 tsp ground cumin 1 tsp dried thyme
1. Slice each chicken breast piece in half horizontally, making two pieces of about the same thickness. Flatten slightly with the heel of your hand.
2. Melt the butter or margarine in a small pan.
3. Combine all the remaining ingredients in a shallow bowl and stir to blend well. Brush the chicken pieces on both sides with melted butter or margarine, then sprinkle the chicken evenly with the seasoning mixture.
4. Heat a large heavy frying pan over high heat untill a drop of water sprinkled on the surface sizzles. This will take 5-8 minutes.
5. Drizzle 1 tsp melted butter on each chicken piece. Place them in the pan in an even layer, two or three at a time. Cook for 2-3 minutes, untill the underside begins to blacken. Turn and cook the other side for another 2-3 minutes. Serve hot.
Sidenote: I have no idea what white pepper is, so I just used normal ground pepper, and there's nothing wrong with tweaking around with a recipie if you dislike or don't have something ^^

Quick New Thing: i started using a grinder with sea salt in it, instead of the old fashioned iodized salt. its really a nice change and its not too expensive. it was like 3.50 i think. its healthier for you as well. we have a pepper grinder as well which tastes better than the other pepper too. It has a fresher taste. I've never had white pepper, so I can't comment on that one.
