Here are a few I really enjoy listening to:
Anime:
Azumanga Daioh (I'm listening to the ending theme, "Raspberry Heaven", right now.)
Cowboy Bebop (Hands down, my favorite anime music ever.)

Video Game:
Final Fantasy (All of their OST's have at least one song I really really like.)
Kingdom Hearts (Yoko Shimumura's quite good at adapting the Disney themes into something catchy and interesting, though most of them have good soundtracks anyways.)

I actually don't listen to many soundtracks, preferring rather to pick and choose among the artists that I like and buy their separate CDs. I get a greater percentage of likeable music, that way. There have been exceptions, though, and I'll list them.
Haibane Renmei OST Almost entirely orchestral, with three vocal pieces thrown in. The melancholy quality of the music matches that of the anime. Also, it has got to be one of the least repetitive orchestral soundtracks that I have ever heard, which is why I actually bought it.
FLCL Yes, FLCL. Furi Kuri. Foolie Coolie. Whatever you wish to call it. I liked the vocal pieces a lot on this one. While I wasn't overly fond of the instrumental bits, the vocal was good enough to cover for it. Besides, I couldn't find one of The Pillows CDs...
Titan AE Laugh all you like. This has an amazing soundtrack. I borrowed it from a friend during a track meet, loved it, and ended up buying it off Amazon.
And that's really about it. There's the extent of the soundtracks that I own.

I'm a theatre child, so when I hear the soundtrack for Anastasia, it takes me back to the best days of my theatre time. heart

Monkeyinafryingpan Music wise, Halo is the best. Very orchestral. as far as video games go i like the Halo soundtracks as well but i prefer to listen to Disney movie soundtracks like The Little Mermaid and Aladin

i don't know any soundtracks of anime or videogames ._.
but i love the soundtrack of spiderman by nickelback ("hero"),
the soundtrack of elektra by Megan McCauley ("wonder"),
and of troja by josh groban ("remember me").

Ya, I don't listen to very many video games/anime soundtracks. I love theatre and movies. Heh, my favorite right now would have to be Wicked for threatre and Rent for movies. <3 Hehe, I'm an oddball.
