I read many things on Hinduism and some mentioned just "God" or Hindus saying "believe in God" but are they referring to the Judeo-Christian god or to the Hindu gods?

Well if all the religious deities in the world are just different manifestations of one Supreme Divinity then the Judeo-Christian God and the Hindu gods are the same.

At least, that's my take on it.

This is an introductory to one of my references i have which hopes to shine light to your question:

Hinduism is famous for its multiplicity of gods. While its true that there are thousands of uniqwue deity forms, those unfamiliar with this relgion may conclude that Hinduism is essentially polythestic in nature. In truth most Hindus believe in only one God or Supreme Being.

According to the Vedic scripture, this one God oversees a host of demi gods or lesser gods who govern univdersal affairs, much like ministers performing duties on behalf of their king. It is also important to clarify Hinduism's recognition of God's ability to manifest in variety of forms. For example, the ten avators or expansions of Vishnu appear at different times throught history for specific puposes. This demonstrates that God is umlimited and not subject to that which our minds may be inclined to project upon Him, or Her, for that matter if indeed gender is even relevent when speaking of the Infinite.
