★ AltaVista Babel Fish TranslatorNot terribly accurate when it comes to the Buddhist languages, but still very helpful★ Google TranslatorDitto★ MDBG Chinese-English dictionaryThere is no end to how great this is. You can search by English term, pinyin, simplified or traditional Chinese characters all in the same space!★ POPjisyoYou feed it a URL, and it will create an overlay for all the kanji. Mouse over it, and you can see its definition. (It is probably done with AJAX). There's several dictionaries available, and it is decent for modern uses of the language. Plus, it has those bookmarklets so you can convert any page you want. (And yes, the characters in the popup are zoomed in so you can see details).

Oh yes. I especially adore the MDBG because it tells you the tones of the characters, and it will even show the traditional variants of Chinese characters.
