I have a cauliflower in my fridge and I was wondering if any of you had an interesting, tried and tested recipe for cauliflower?

I have pretty much nothing else in the fridge - like cheese and such. But I do have herbs and spices, tuna, a couple of tomatoes and some oher bits and bobs in the cupboard. So it is very def a challenge for you!

1 medium head cauliflower
1 tablespoon cream cheese, softened
1/4 cup grated Parmesan
1/2 teaspoon minced garlic
1/8 teaspoon straight chicken base or bullion (may substitute 1/2 teaspoon salt)
1/8 teaspoon freshly ground black pepper
1/2 teaspoon chopped fresh or dry chives, for garnish
3 tablespoons unsalted butter

Set a stockpot of water to boil over high heat.

Clean and cut cauliflower into small pieces. Cook in boiling water for about 6 minutes, or until well done. Drain well; do not let cool and pat cooked cauliflower very dry between several layers of paper towels.

In a bowl with an immersion blender, or in a food processor, puree the hot cauliflower with the cream cheese, Parmesan, garlic, chicken base, and pepper until almost smooth.
Garnish with chives, and serve hot with pats of butter.

Hint: Try roasting the garlic and adding a little fresh rosemary for a whole new taste.

2 medium potatoes, peeled, cut into chunks

1 cup bite-sized cauliflower florets

1/4 cup KRAFT LIGHT DONE RIGHT! Ranch Reduced Fat Dressing

PLACE potatoes and cauliflower in large saucepan. Add enough water to completely cover vegetables. Bring to boil on medium-high heat. Reduce heat to medium-low; simmer 20 minutes or until vegetables are tender.

DRAIN vegetable mixture, leaving vegetable mixture in pan. Add dressing; mash until vegetable mixture is light and fluffy.

8 cups cauliflower florets (about 1 small head)

1/4 cup KRAFT Ranch Dressing

1 green onion, thinly sliced

BRING water to boil in large saucepan. Add cauliflower; cook 15 min. or until cauliflower is very tender. Drain cauliflower; return to saucepan.

ADD dressing; mash until cauliflower is light and fluffy. Sprinkle with onions.

1/4 cup olive oil

2 tsp. curry powder

2 tsp. sugar

1 tsp. lemon juice

1/2 tsp. salt

1/4 tsp. black pepper

4 cups cauliflower florets

1/3 cup PLANTERS Slivered Almonds

PREHEAT oven to 400°F. Mix oil, curry powder, sugar, lemon juice, salt and pepper in large bowl. Add cauliflower; toss to coat.

PLACE in 13x9-inch baking dish; cover with foil.

BAKE 15 min. Add almonds; mix lightly. Bake, uncovered, an additional 10 to 15 min. or until cauliflower is lightly browned and almonds are toasted.

1 egg

1 cup bite-sized cauliflower pieces

other veggies if you like (like broccoli or mushroom caps)

1 pkt. SHAKE 'N BAKE Extra Crispy Seasoned Coating Mix (or seasoned bread crumbs)

PREHEAT oven to 425°F. Beat egg in small bowl. Dip vegetables in egg; shake in coating mix.

PLACE breaded vegetables on lightly greased shallow pan.

BAKE 20 min. or until crisp and golden brown.

No cheese or butter. sad

But those sound fantastic!! I'll def be having them when I can afford to shop again!!

Instead I -

Lightly fried the cauliflower with some carrots, then added some stock. The tipped a tin of condensed tomato soup in.

After that, added some tomato puree, garlic, pepper, Smoked Paprika, Chilli flakes, lemon juice and a little marjoram.

Thenhad it with some lightly scented rice. smile

My guess would be something you might find in a Christmas package


A christmas Package? Is that like those packages you get to make up cakes and puddings etc. Just add water sort of thing?
