Hey there, everyone! I know mashed potatoes are a common favorite side dish, especially for dinner meals. Here's a healthy alternative in case you want to keep away from starches or just want to practice eating healthier. This is very easy to make at home and I don't have concrete measurements. Everyone's tastes are different so feel free to tweak these however way you want.
What you'll need:
- 1 head of cauliflower - Salt - Butter - Mixer or a hand masher - A pot big enough for the cauliflower to be in - Strainer
Instructions:
1) Boil a pot of water. Don't fill it to the top! You don't want the water to overflow when you put the cauliflower inside.
2) Strip the cauliflower apart into several small pieces and put them into the pot.( You can add any kind of oil or butter to the pot beforehand.)
3) Let it cook for about 10 minutes. You may want to take a small piece off and see if it's soft enough for your liking.
4) As soon as you feel your cauliflower is cooked enough, take the pot and carefully pour the contents into the strainer.
5) Next, put the cauliflower into the mixer and add a tablespoon of butter, some salt, and/or pepper to the batch. Mix on low first and then gradually work your way up to medium or high. (If you like your mashed potatoes more on the lumpy side, mix on low for a little bit.)
6) After you have mixed your cauliflower to whichever consistency you'd like, it is ready to serve. Enjoy!
Please tell me whether or not you've enjoyed this recipe. I'm sure there are others out there that are better and more accurate than mine. This is just how I made it and it turned out pretty well for my family and me. Take care, everyone!

I hope you come back to Gaia. crying You must have posted this right before my absence. xD I've been back awhile but haven't got a chance to lurk in the subforums much. I love this recipe. I'm going to try it tomorrow. I have never cooked cauliflower. In the unfortunate event you never come back your recipe will live on!!!!! xD Thanks. smile

And you're most welcome. whee Hey!! So.. uhm.. I didn't get to try it. xD I'm sure you saw the announcement if you've been on but I was absent for awhile. Haven't even been home that much. But I am going to the store in the next few days and I'm gonna get a cauliflower and try it. I swear this time, haha. I have it on my grocery list.

My favorite way to eat cauliflower is raw with nutritional yeast, olive oil, and spices, but I'll have to give the cooked mashed version a shot.

I'm kinda curious though, is adding butter bad for overall health? confused

I finally got to try it today! It's been so hectic for me. It's the first real thing I've cooked in awhile. I loved it! I couldn't break the pieces off, maybe it's my bad hands. I had to cut at the cauliflower with a knife, lol. I tried it just the way you said and liked it, so I added milk and pepper. That's how I usually do potatoes. I didn't put much milk though, I wasn't sure how well it would soak it up but it did pretty good. I'll definitely be making it again in the future.

Different...Very. My favorite way to eat cauliflower is raw with nutritional yeast, olive oil, and spices, but I'll have to give the cooked mashed version a shot. Oh, man. I never knew how versatile it was, haha. I love olive oil. I will be doing more stuff with cauliflower now.

I can't help it, it tastes good. xD I should try and use less though. Probably will. Usually once a bad habit is brought to my attention I try harder for at least awhile, haha. I finally gave up marshmallows. They aren't even vegetarian but I ate them, I know.... shame on me... but they kept making me sick... xD
