The sea-creatures that are "randomly put into katakana" are done like so because of complex kanji that are used to write them. In many cases, like ebi (shrimp) there are two different ways to write the word in kanji, which causes some confusion.

Certain plants, flowers and animals are written in kana when the characters that are assigned to them are complex or old (kyuu) kanji, or when the word's pronunciation in no way reflects the standardized on/kun readings for the characters.

i know nothing.
