The best (and only way in my opinion) is to use sticky rice. I eat onigiri almost every day as it's cheap, quick to make a batch or two and then you just put them in the fridge for later and they last up to four days with meat filling or a little over a week with pickled plums.

Here is the recipe of Japanese Foods about page. It's rather traditional and about the same as the way I learned to make them. My personal favorite filling is smoked salmon, though I adore fish.

Tip: Pressure decides if the onigiri is going to be formed properly or not. Too little and it's not going to stick and too much you could squish the contents or it will shape odd. If you're not very good at palming the triangles, you could always find these super cute onigiri makers that can make them into fish, bears, cars, toys, etc. I do this for my son so he'll be more likely to eat them. They're only about $1 to $2 at a Japanese dollar store on the west coast (USA) or you can get them off amazon or ebay for rather cheap still.

I'm not surprised. Every time I see a video or something on how to make them, it's not like a 3 step thing.

I want to make some. Thinking of using This recipe, but i'm not sure if it's a good one. Any other suggestions?
Also, have any of you ever made it before?
And why isn't there a culinary subforum?

I had a craving for some awhile back myself and I lived in Tokushima for about 10 years. So I've had some damn good rice balls, now with that said I would suggest this recipe for it's pretty damn close to what I would eat a few years back. Onigir
