Would it be a good idea to buy higher gens of new EIs and then selling them once they are fully evolved?
For example-- the Zodiacal first gen through fifth gen has evolved fully. Would it make sense to purchase a sixth gen Zodiacal, wait for it to evolve fully, and then sell it?

Definitely, and it's a pretty safe investment too. You can always expect all finished gens to settle around the same price, which means that you can predict the returns you'll get as well.
