Those are actually the only ones I've done so far too. I did them real quick.
Gohma: 00:22.20 Dodongo: 00:40.60 Barinade: 1:44.66 Phantom Ganon: 01:42.20
I actually had to do Gohma and Barinade twice cause I messed up the first times.

Ah I see, those were all my first attempts. I have some more now. Volvagia - 1:22.70 Morpha - 4:48.46 (so much hate for this fight) Bongo Bongo - 00:43.13 Twinrova - 5:41.16
Messed up on a few of them myself, so I'll be doing these a few more times. I was caught by surprise that I needed to rush to the blue circle to stop the clock.

Basically you get no items (well you do, but they're all at zero) with the exception of the Slingshot and Bow (which are needed for most bosses). You're items are carried through to each boss battle (example, you use 3 arrows against one boss, you'll be at 27 arrows left for the next boss). At the end of each fight, two chests spawn, one which gives you an extra heart (I think of it as a free heal) and the other gives you a random item to use.

Yes, it appears after you complete Time Attack for every individual boss.
