their is full moon wo sagashite which is pretty good so far im not done with it yet and then there is Rosario + Vampire which is really gooood!!! ^_^

Hellsing, Hellsing Ultimate, Ginga Densetsu Weed, Yuyu Hakoshu, and there are other's that I like, but these ones would be highly reccomended ^^

Rave Master's definitely a good one. Blood +, Samurai Champloo, Cowboy Beebop and Jyu-oh-Sei are also highly recomended.

I would recommend Freezing, Togainu No Chi (if you don't mind bloodshed and a little shonen-ai), Kuroshitsuji 1 and 2, and Wolf's Rain. I'll think of some more when I have time.

Black Rock Shooter. Only has one episode so far, and I'm not sure if there's going to be a second one or not, but it's well worth your time.

Cowboy Bebop and Trigun for light, classical fun.
And if you don't mind a series that really makes you think about plot:
Serial Experiments Lain, Boogiepop Phantom (Don't let the same fool you, the Boogiepop franchise is the most genius series of anime I've encountered at least. It'll make you jump too.)
