Nya! I made it last week before I got sick and it is amazing!!!! I personally hate casserole with a passion! It usually means mom is bored and she doesn't feel like cooking so she throws nasty stuff with noodles together and serves it to you, well you wanna one up her? Try my Chicken Quesodilla casserole!
Ingredients: CILANTRO (most important ingredient) ground Cumin Adobo Chili powder onion powder garlic powder fajita mix (or taco mix) Chicken breast (minimum 3) Tortillas salsa (at least one jar) Mexican cheese mix (in the bag) Mozzarella (in the bag)
Preparation: pre-heat the oven to 325 (it takes a bit in my oven that's why I do this first) take the chicken and cut it into bite sized pieces season both sides evenly with Adobo, onion powder, garlic powder, fajita mix. rub it into the chicken next on a pre-heated skillet/frying pan cook the chicken thoroughly in a tiny bit of oil (just so it doesn't stick to the pan) next while that's cooking cut at least 8 tortilla stips into 1/4 to 1/2 inch strips. line the bottom of the casserole dish with the tortilla strips (not all just enough to coat the bottom)
Directions: next take the chicken and put it on the noodles after that take the chilli powder and cumin powder and evenly spread it accross the dish and you can use up any extra fajita mix too. put in a nice layer of chopped fresh Cilantro on top of the chicken then add in about half the bag of Mexican taco cheese, then 1/4 the bag of mozzarella Then add the whole jar of Salsa, add more cheese until the bag of cheeses are 1/4 full each, then add more tortilla strips and mix it all together (go ahead it'll still look great, remember this is a casserole it's supposed to look a little mixed up) pour the rest of the cheese on top after it it's mixed up and put in the oven for 23 minutes. let sit in the oven for 2 minutes and serve! tis delicious!!

That does sound quite excellent, and reminds me that I will be eating delicious Colombian food this week. SCORE. Might try your recipe too, TJ.

Without it would be dry and icky, the salsa is what the tortillas are getting their moisture from, trust me it took me awhile to perfect this recipe whee You don't have to use spicy salsa, I use medium, or chunky vegetable salsa that way it picks up more flavor in my opinion. And I use the salsa that comes in the smaller jars, again you don't need to over indulge in the stuff. And yay! my recipe is being used! *happy dance*

Spiciness is perfectly fine, it's the chunks of stuff that I'm trying to avoid here. I kind of don't like most veggies. Something about their consistency makes me not like. So, since I'm a tard when it comes to this stuff, is there salsa that doesn't have chunks and is just, like...sauce?
