In the first game they had two gravestones that were dedicated to the people who worked on the music for the game, Danny Elfman and Russel Shaw.

i dont remember many of the gravestones but theres one in bowerstone which says something about being a highwayman.,
if you dig there you get highwaymans hat and mask smile

Danny Elfman did the main theme for the first Fable. Russel Shaw did the rest of the soundtrack. Shaw also used the first theme to make one for the second.

I found a Legend of Zelda reference in Fable 3.

If you go to the graveyard in Mourningwood, theres a level 4 dig spot on one of the graves. The grave says 'Its dangerous to go alone, take this' and when you dig it up you get a toy sword blaugh

An old one from Fable.

"Every word on this cost two gold. My family didn't-"

A somewhat new one:
"Here lies Mrs. Spade, now at peace. ADDENDUM: Now that her sons are buried next to her, the above statement doesn't apply."
"This was all Max's Fault!"
"I had it all under control until Sam cocked it up!"
