Yup. A thread to share your favourite baking and cooking recipies. I'll start off with my Butter Tarts recipe.

Butter Tarts


1/2 cup brown sugar
1/4 cup corn syrup
3 tbls soft butter
1 egg beaten
1 tsp vanilla
1/8 tsp salt
1/2 cup raisins (optional)

Combine throughly sugar, corn syrup and butter. Add egg, vanilla, salt and raisins. Fill tart shells 2/3 full of mixture. Bake at 425F for 8 min. Lower heat to 350F and continue baking until filling is set and pastry is baked, 15-20 min.

What I use to do is instead of putting the raisins in the mix I would put them directly into the shells. Usually 3 per shell works. That way there was always an even amount in the tarts. BUT, it's optional to do this. You can use pecans instead, or just nothing. ^___^ I like them without raisins and nuts. Just use frozen tart shells. To make your own is very difficult...I don't make my own tart shells! Just remember that you don't prebake the shells. You bake them once they are full. And use a muffin pan to hold the shells it is much easier that way. If you don't have a muffin pan use a cookie sheet to put them on while baking.

Irish Pancakes(to put the apple jelly on wink )
These are also known as Scotch Pancakes, especially in the north. They must be cooked as soon as possible after mixing, as the acid in the buttermilk starts to react with the baking soda at once. For that reason the griddle or pan should be heated before combining the ingredients.

8 oz/ 250g/ 2 cups plain flour
1/2 tsp baking soda
1/2 tsp salt
1 tsp sugar
1 large egg
1/2 pt/ 250ml/ 1 cup buttermilk

Sift the dry ingredients into a bowl. Make a well in the middle with a wooden spoon and add the egg. Break the yolk and pour in the buttermilk, mixing quickly to a thick batter. Do not beat, as this would develop the gluten in the flour and prevent the pancakes from rising. Fry in large dollops on a lightly-greased, hot griddle or heavy frying-pan. Drop scones are best served hot for tea, thickly spread with melting butter and syrup or jam.

Here is an easy way to make thin pancakes:

4 oz/ 125g/ 1 cup plain flour
pinch of salt
2 eggs
1/2 pt/ 250ml/ 1 cup milk
1 tbsp melted butter

Put all the ingredients in a blender and blend for about 30 seconds. The batter should then be allowed to stand for 30 minutes in a cool place. Heat a small pan over a medium heat. Grease with a little butter and wipe out with kitchen paper. Fry about 2 tbsp of batter at a time, swirling to cover the base of the pan. Keep them thin and there will be no need to turn. Serve rolled up with sugar.

Tuna Casserole

This is my mom's recipe for those nights you can't slave over a stove or oven and make dinner. It takes less than an hour to prepare and is great as leftovers as well (if there are any left).

1 Can of Tuna
1 Can of Cream of Mushroom Campbells Soup
1 Bag of No Yolk Noodles
1/2 package of Ritz Crackers
1/2 cup of Milk
1 can of slice mushrooms (optional)

Boil the No Yolk Noodles in hot water until they soften. While watching the Noodles, warm up the Cream of Mushroom Soup and pour the 1/2 cup of milk with it. Drain the water from the noodles and pour in a large ceramic bowl/pan (preferably wide and low or enough to hold all the noodles). Mix the tuna with the Mushroom Soup and pour in with the noodles (the extra can of slice mushrooms may be added now). If possible, mix it up a bit. Then crumble ritz crackers on the top as the final layer to cover/hide the noodle, mushroom mixture. Cover container and cook in microwave for 20-30 minutes. Then serve warm. n_n

Gruel-(not the nasty kind. I just didn't have a name for it and it kinda looks like gruel.)

1 can murshroom soup.
1 cup rice
2 cups water
1p ground beef.

1. place water and rice into medium pot, cover and let boil until rice is desired tenderness.
2. in medium saucepan, brown ground beef until well cooked.
3. when rice is finished, place rice in a medium saucepan and add can of mushroom soup. Cook, stir well initially, then stir occationally until done. Done is when the muchroom soup has been absorbed by the rice.
4. add beef and remove from heat.

optional steps: season the beef with pretty much anything you think goes with mushrooms. You can also add cheese into soup when cooking into rice. Feta cheese is a nice additive to mushroom soup. cook on whatever temperature you like.

suggested to serve with steamed vegetables or a light salad.

Cajun Shrimp Etouffe

  • 1 stick butter
  • 1 1/2 c. onions, chopped
  • 1 c. green pepper, chopped
  • 1 c. celery, chopped
  • 1 tsp. garlic, minced
  • 1 Tbsp. flour
  • 1/2 c. water
  • 2 tsp. tomato paste
  • 1 Tbsp. Worcestershire sauce
  • 1 1/2 ib. shrimp, peeled and cleaned
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 to 1 tsp. red pepper sauce
  • Hot Cooked Rice


Melt butter or margarine in large pan. Saute onions, green pepper, celery, and garlic until wilted. Mix flour with water and add to sauce with tomato paste and Worcestershire sauce. Simmer 15 minutes. Add le shimpy shrimp, salt, and pepper; simmer 15 more mintues. Add pepper sauce and cook for 5 minutes. Serve over hot steamy rice.

Silly question:

For recipes with the mushroom soup, do we add water per ormal instructions, or forgo the water and simply just cook the soup?

Egg fried bread

So easy to make even I can do it, but delicious all the same.

2 eggs per person
bread slices, even old bread tastes well
spreads: cheese, ham, bacon, salami, jam, honey, chocolate spread...
Additions: milk, spices

Take a pan and pour some oil in it to cover the bottom. Then put it on a stove to heat up. Open the eggs and put them in a deep bowl. Then mix them up with a fork with perpendicular circular motions (just as long as they're well mixed and start frothing a bit, it's fine). You can add a little milk and any spices you want. Dip the bread slices in the egg mixture until they've soaked through. Put them in the heated pan and fry for a little while (couple of minutes or less) until they go goldeny brown. Flip over and repeat with other side of bread. Take out and apply any spread you wish.

Chocolate peanut butter no bake cookies

2 Cups sugar

2 sticks butter

1/2 cup cocoa powder

1 Cup Peanut butter

2 cups quick oats (More if nessicary but do not exceed 4 cups)

Start out by softening the butter (25 seconds in the microwave works for me)

then mix the butter, sugar, and cocoa powder together and stir untill throughly blended

Spoon in the peanut butter and stir until blended completely with the chocolate. stir in the oats.

once all the ingrediants have been throughly mixed together you can either roll it into tablespoon sized balls Or spread it out on a cookie sheet so it can be cut into bars later (I recomend doing it that way). Place the refrigerator and let chill for 1 hour then enjoy!

Garlic-mozzarella rolls


A very simple recipie for very yummy garlic bread. <3 It goes great with any kind of pasta!


  • One english muffin for each person
  • Two tablespoons shredded mozzarella cheese for each person
  • Garlic powder to taste

Cut each english muffin in half. Add one tablespoon of mozzarella cheese to each half. On of the cheese, sprinkle garlic powder to taste. Toast one pair of halves at a time for 30 seconds, or until the cheese melts. Serve with pasta or just as a snack.

California Donburi


Okay, so this is pretty basic, actually... But it's really good so I'm sharing it >:3

heart Avocado
heart Steamed (Sticky) Rice
heart Seaweed
heart Crab Sticks
heart Soy Sauce

It's basically a California Roll in Donburi form, but basically put the rice in a big bowl and add in slices of Avocado and Crab Sticks, best if the Crab Sticks are separated so it's about 4-5 strands or so. Pour about a cap full, or about a tablespoon of soy sauce and pour it over the avocado and crab meat and sprinkle pieces of seaweed on top =9 Enjoy~ ((Great... Now I'm hungry...))

Peanut Butter Bars

(it's more like the texture of brownies, but it's peanut butter, not really chocolate)

1 cup creamy peanut butter
6 tbsp. butter or margarine, softened
1 1/4 cups granulated sugar
3 large eggs
1 tsp. vanilla extract
1 cup all-purpose flour
1/4 tsp. salt
1 3/4 cups milk chocolate and peanut butter morsels mixed

Preheat the oven to 350 degrees F.

Beat the peanut butter in a large bowl until smooth. Beat in the sugar, eggs and vanilla extract. Then beat in the four and salt. Stir in the morsels. Then spread into an ungreased 13x9-inch baking pan.

Bake for 25 to 30 minutes.

You can either cut them into bars after you cook them, or just cut them out like brownies whenever you want.

I just made this last night, and it's delicious. heart

This is a recipe my cousin got from something...and I kinda changed it around. My cousin's had bananas in it and chunky peanut butter, and just milk chocolate morsels. Either way is fine. ^_~

Hot salad


Serves: 4
Cannot store, cannot reheat, must eat straight after cooking

Ingredients:
8 medium sized, white skin potatoes
1 lettuce
1 brown onion
1 tbs of butter
500g of bacon
Salt & pepper
water

Directions:

Step one- Peel and boil the potatoes in water until soft enough to mash. You can cute the potatoes smaller to make them boil faster. Add salt to the water while boiling.
Step two- Cut the fat off the bacon. Then cut the bacon into approx 1cm x 1.5cm pieces, do the same with the onion.
Step three- Fry / sortay the bacon and onion pieces with one tbs of butter, in a frying pan.
Step four- Wash, drain and shred the lettuce into a large mixing bowl.
Step five- Drain the boiled potatoes and add to the mixing bowl while still hot. Add the fried bacon and onions to the mizing bowl as well. Toss and mash everything in the mixing bowl until the lettuce is cooked by the hot mashed potatoes. Add salt and pepper, eat while hot.
