To make about 25 crunchies, you will need:
75g (3oz) rich tea biscuits
50g (2oz) dried apricots
225g (8oz) white, plain or milk chocolate drops! (Maybe if you have a big party coming up, or you are just feeling greedy, make 25 crunchies with each different thing. 75 crunchies.....ahhhhh...yum yum....ANYWAY! On with the recipe! stressed )
4 tablespoons of golden syrup
1 teaspoon of drinking chocolate or icing sugar
Small Paper Cases
1) Break the biscuits into tiny pieces and put them into a bowl. Cut the apricots into tiny pieces. add them to the biscuits.
2) Fill a large pan a quarter full of water and heat it until the water bubbles. Then, remove the pan from the heat.
3) Put the chocolate drops into a heatproof bowl. Wearing oven gloves, put the bowl into the pan.
4) Stir the chocolate until it has melted. Carefully lift the bowl out of the water. Let the chocolate cook for a minute.
5) Quickly stir in the golden syrup, then add the biscuits and apricots. Mix everything well with a wooden spoon.
6) Scoop up some of the mixture with a teaspoon. Using your hands, shape it into a ball and put it into a paper case.
7) Make lots more balls and put them onto a large plate. Put them in a fridge for an hour, until they are firm.
8 ) Sift the drinking chocolate or icing sugar over the crunchies. Keep them in an airtight container in a fridge.
These crunchies need to be kept in an airtight container, and eaten within three days!
