White Mage: Healing magic, ressurection magic. Can cure diseases and other 'negative statuses.' Weak physically, strong magically. Contrary to popular belief though, White Mages are actually one of the more sturdier casting classes. They just do crappy in melee combat because they don't have many options to actually harm their foes, so a lot of battles tend to be long. (but they almost always get there eventually with their ability to heal themselves) They do have some form of offense though, usually in the form of Silence and Holy spells. (this is Solidify's favorite class)
Black Mage: Offensive, destructive magic. They're physically weaker than the white mage though, but their magic more than makes up for it. They're also fond of death (aka 'nuke') spells. They can also wield better weapons than the white mage.
Fighter/Warrior: Physically strong, plus they usually act as 'tanks' for party members and can withstand a lot of damage. Can also enchant weapons with elemental properties. Since their own magic and abilities tend to be ho-hum, they rely a lot on stats and armor/weapons to get the job done. Fighters are great for beginners since they're not as 'high-maintenance.' Some Warriors are also known as 'Knights' (or Paladins) and can cast weak White Magic.
Red Mage: Wields both white and black magic. They're also pretty sturdy, and have average strength. Basically, a Red Mage is a White Mage/Black Mage/Warrior hybred.
Alchemist: Mixes potions and items and other stuff to help them in battle or in other situations. Kind of 'gadgety.' They're very ingenious and intelligent. They're a little weaker (physically) than the Red Mage, but not as weak (physically) as White and Black Mages. A gnome would make a great Alchemist.
Blue Mage: Uses enemy's skills in battle. They're very unique, and they can be either very powerful or very weak. There's not a lot of middle ground on this. Their strength reflects solely on the sheer power of their abilities. So therefore, their own stats tend to be kinda crappy. They copy certain enemy abilities just by being hit with that ability. The more rebel Blue Mages are known to hunt a single creature for years just for that one special spell that puts all classes to shame.
Summoner: Like the Blue Mage, the Summoner's stats are crappy. They're sometimes hard to protect, but if you can manage to keep them alive their legendary monsters can wipe out almost all enemies with ease. A lot of children/old people are Summoners, as well as eccentric people who 'don't fit in.' Some very tough fiends have the power to instantly dismiss their monsters, rendering Summoners useless in certain situations. However, more versatile Summoners also wield basic Black and White Magic.
Thief: Uses time spells to help him steal things better. The Thief is quick, and has a 'kill or be killed' feel to it. Thieves eventually evolve into Assassins, which are like thieves on steriods. Thieves are both great and annoying because you always need a Thief, but then again, you never need a Thief.
Time Magic: Uses time magic like the thief, but their spells are much more potent. A very skilled Time Mage can reverse time to the start of the battle if things just get plain unlucky. With a Time Mage, taking down very strong monsters becomes easier. The main weakness of a Time Mage, however, is they tend to be very situational. They lack 'directness.'
Archer: Long-raged physical attackers. Their defense is mediocre, and they can be easily knocked out up close. But usually, they're able to keep monsters at bay with their powerful arrows.
Elementalist: A very rare class, Elementalists wield the elemental magic known to a Black Mage, but in a more powerful way. They have a lot of AoE (area of effect) spells and can damage a lot of enemies at once. However, position and terrarin are their weaknesses. The casting time of their spells is outrageously slow, and a few spells only work in very few situations. However, they make up for this by mixing negative statuses with elementals. They can freeze/stop opponents or wind/confuse opponents for example. Their stats tend to be pretty average. They're not that easy to knock out, the challenge comes from casting the right spell at the right time. They cannot 'spam' their abilites like a Black Mage could.
Dancer/Bard: An under-rated class, Bards know they're usually not wanted. They get teased a lot, and even the saintliest of White Mages have trouble not picking on them. But underneath that surface, they truly are a powerful class. Their songs cast a lot of negative status in battle, and they can boost up party member's stats as well. Sadly, they won't be thanked as often as a White Mage. It doesn't bother them too much, a lot of bards are lonely nomads, traveling from one town the next with a sad song in their heart. When bards are happy though, truly happy, it shows.
Berserker: Even more physical than the Warrior, berserkers have a very primal feel to them. They're pretty easy to play, too, since they're basic and tend to specialize in one thing: doing melee damage. Of course, this lack of versatility is also their biggest weakness. Berserkers are physically stronger than Warriors, but they lack their defense and aren't as gear-dependent. Berserkers tend to be boorish and bossy.
Dark Knight: Kinda like the opposite of a Paladin. Dark Knights are physically strong and they use black magic as well as negative status spells. Plus, they can even heal themselves slightly with the 'Drain' spell. Dark Knights are ruthless and may seem very overpowered at first. But since they forge the power of darkness itself, their strength doesn't come without a price. Whenever a Dark Knight hurts something, he slightly (or marjorly, depending on the ability) hurts himself as well. This helps balance him out, otherwise a Dark Knight would truly 'pwn' all classes since they're very useful. Dark Knights also have one more weakness: they cannot be cured by healing magic! (I made this one up myself, since in Final Fantasy X-2 you could easily heal the damage dealt by the Dark Knight's darkness ability when paired up with a White Mage. They were just too strong and you never needed another class.)
Green Mage: Green Mages use a plethora of negative status spells to help turn the tide in battle. Other classes use negative status spells, but not as well or as versatile as the Green Mage. The Green Mage relies on tactics rather than brute force to get the job done. They have a lot of trouble fighting boss monsters, but they can wipe through the rest of the dungeon fast just by Mega-Deathing everyone to...death. Their stats are so-so, and they can fight kinda okay if their magic is rendered useless.
Rainbow Mage: This is a made up class. A Rainbow Mage is basically a white mage/red mage/black mage/green mage/blue mage hybred! They're very versatile and powerful. However, their abilities lack accuracy. They can learn both Curaga and Firaga, but you never know if it's gonna hit or not. Hey, you just never know when you're gonna see a rainbow, and the Rainbow Mages reflect that.
