Oh man, I'm a total addon hound. My UI is so addon-ed out that I literally can't play the game without them anymore. Kinda stupid, but oh well, it makes me happy!
As for addons I'd suggest, well, it depends on what you need addons for. I know good Roleplay Addons, I know good UI changing addons, I know good databroker addons. So yeah, you tell me what you need and if I use it, I'll advertise it XD
Although I will give a shoutout to ForteXorcist, which is a great, small screen-usage addon that really helps a ton in keeping track of cooldowns on just about everything that has a cooldown.
TipTac is really great too for making tooltips even more useful!
and yeah, that's my two addon shoutouts for this post *bows*

Grid, for healing instead of the original raidframes. I hate raidframes.

Grid or something like it should be used by everyone. There is so much information that is helpful that comes with grid compared to the standard raid UI.
Also, I used to be a huge addon whore myself, but then realized that I can't keep running with 36mb of memory being used. So I had to cut back..

I'm still an addon whore, though I've cut back quite a bit.
Here is a small list, I'm sure I can find plenty more to share. =3

Grid is still better for me than the default raidframes (even though they are much improved) mostly because debuffs are still too tiny. That and I find the default frames smallest size are still a bit too big for my UI.
Chinchilla Minimap is pretty awesome, it lets you move a good deal of the UI around the screen to your liking. I've used it to reclaim a lot of screen space.
Bartender4 is another good one for making screen space since you can remove the stock graphics behind bars and move the bars around as you please.
Stuf is a very nice unit frame replacement. I use it for player, target and party frames but it is capable of doing raid frames as well. It's similar to Pitbull but much lighter weight.
Clique is handy too. I mostly use it for dispelling, but some people have all kinds of heals and things bound to it to heal with only a mouse.
ChatBar is one of my old old favorites back from the Cosmos package days. It hasn't been fixed for 4.0 just yet.

I love addons.
My one simple addon that I can't go without that doesn't change game play in any way is Onebag.
It does just what it sounds like it would do. It make all you inventory space into one window. It is so easy to keep everything neat and organized with it.
I also use: TotemTimers, TotemGuru, Total Recall (these three are all Shaman addons that in one way or another affect your totems); Recount, Rare Spawn Overlay, Omen, IceHUD, ForteXorcist, Decursive, DBM, Auctioneer, Atlasloot, and Altoholic.
As you can see I am not a person that believes using and addon takes away from the integrity or game experience in any way.
