technicly (ya i know i cant spell) Black star Tsubaki Soul Maka Kid Liz and Patty are all the main characters Soul and Maka are just a little more main then the rest XD

its because (ya i suck at spelling to) the black blood in soul........ and they couldnt call it "maka albarn" "soul eater"sounds much cooler

Yes but Souls name could have been George the Muffin Man but they (probably) chose that name to give the shows name more of a meaning than the literal meaning.
