I don't remember if it ever explained this somewhere or not, so please excuse me if this sounds dumb, but did it ever actually explained why Alucard chose Seras to become a vampire? I mean, I know she chose to, but that in a way, she kinda had to because she had a huge hole in her chest.

In Volume 3, when Walter asks him why he made Seras into a vampire, he says that he was impressed by her will to survive and that she made the choice on her own. It's also generally agreed that he turned Seras into a vampire to take his place as Integra's servant, which she does in Volume 9.
