When you first make your beginner player and decide you want to be a pld. What job do you start off with? Warrior or whm. Would it be smarter to start with warrior then sub for whm?

Warrior because that'll be the sub you'll be using on PLD 99.9% of the time.
Now...If you do plan to become a PLD, for the love of Altana, do NOT use a Sword and Shield with WAR. If you're claiming to train for PLD, that won't work. Best to train for PLD on PLD since the two jobs have different hate holding tools.
With magic skills, you can skill them up easily on PLD as with Sword and Shield skills.
If you want to tank on WAR, best you go with Great Axe or Axe&Shield and use a MNK sub for mainly tanking (Could be used to help deal damage) or THF at 30+ (Up to 37 at least) to help with a damge dealing role.
Using the proper subs and proper weapons will make leveling WAR as painless as possible while helping your party out in being a optimal damage dealer. Also, with warrior tanking, our main hate-holding tool is our damage.
Now for one final thing...With tanking...Make sure you keep your armor up to date (Look at the DEF and stats. Some may weigh the other out. Mainly aim for DEF, though) along with your weapons along with using provoke every 30 seconds when you can.
Here's a macro that you'd like to make for WAR when tanking:
Line1: /p (Provoke)
Line2: /wait 15
Line3: /p (Provoke) ready in 15 seconds.
Line4: /wait 15
Line5: /p (Provoke) (Ready!)
The stuff in the ( and ) represent auto-translator text.
Eh...Yeah...Probably more then what was asked for but back to the point...Leveling warrior is the best choice of job to start with for if you plan to level paladin.

Hehe. Glad I could help. It's just the WAR75 in me dying everytime I see I WAR tank that isn't properly geared and struggle/not doing a effecient job tanking. Just wanted to pass on some knowledge that should be known.
Anyways...Glad that was the stuff ya needed^^

I wouldn't recommend lvling Axe if your gunna become a PLD. I would say Great Sword.
PLDs can't use axe so to lvl this would be pointless. I made that mistake and I find myself going to skill up pts now to lvl Great Sword. Tho you don't use a Great Sword when your in an EXP pt with PLD it's still great to have when doin' other things like missions, quests, etc.

Axe and great axe on Warrior first with great sword and other weapons to skill up after those two are capped: O
In terms of weapon ratings, Great Axe is A+ to a WAR while Axe is A. Great Sword, Sword, Scythe, Polearm, and I think a few others are B- or B. It's hard to notice at the start but really. You want to do the best you can on WAR tanking to make it the least painful.
You can always skill up great sword on your own time but with tanking, the weapon skills, damage, and delay aren't justifiable for using a great sword as DD or tanking on WAR.
Great axe has the greatest weapon skill you can use while EXPing to 37: Shield Break. The impaired evasion effect is THAT noticable. For damage, at WAR23, you get access to Sturmwind which can hit into the 300s or higher easily. Real easily at 30+ with THF sub and sneak attack. That dmg will gain you hate to help you tank and/or let you provide a great dmg output for a DD role, too.
True, the only good use for G.Sword on PLD is solo/non-EXP and end-game events. It's easier to skill G.Sword up as a WAR or PLD, though, at level 61+ when you can use the Mercurial Sword.
