I live in a country house and mother is obsessed with making all kinds of meat and potatoes and boxed meals.
I need advice on whats health to eat so i can take over cooking and loose the wiehgt ive already cut out soda of my diet, i drink juice and sometimes water yeah i know your supposed to drink water lots of water however i really hate the taste of water, anyway back to the topic at hand i need help with foods.

Be careful with the juice. Some juices are higher calorie than soda! Check the nutrition facts before you assume it's better. Most diet sodas are 0 calories, Coke zero and diet root beer taste pretty similar to the originals. You can also find low calorie juices, just be sure to read the label.

I'll keep you my dirty little secret... I wouldn't touch 'diet' soft drinks if I were you. Coke has enough chemicals to be a street cleaner, so I wouldn't put stuff like that into my body.
I recommend drinking tea. I personally love green tea and black tea on it's own, but my friend likes to add sugar. Tea has very few calories and supposedly helps to boost your metabolism.

...don't tell anyone or you'll be just another regret. Nearly anything, except completely organic foods, that are low calorie have a lot of artificial ingredients. That includes foods, juices, and diet sodas. Actually, the diet rootbeer that is sitting next to me has fewer artificial ingredients than the orange juice and lemonade in our fridge. I'm not trying to say that cutting soda out of the diet isn't beneficial - it is, both regular and diet sodas aren't nutritious and could easily be replaced with better stuff, like the teas you mentioned. I'm just trying to make suggestions that could help a transition instead of switching from one bad thing to another.

I just don't like soda anymore now that I don't drink it on a regular basis. I get cravings now and then but it's been like... once in the past six months that I actually had a craving.
If you live in the country do you have a farmer's market to go to? You can get all the stuff for great salads soon that can go along with your mother's meat and potatoes and that way you're not in charge of the cooking or anything.

Quite honestly it depends on what you have access to. I can't look in your fridge/pantry/budget to know what you can and can't get - none of us can.
But really, drink water and make veggies. Don't cook any veggies in any meat (I know a lot of people cook like, beans or greens with ham or meat fat) and keep half of your plate green.
Salads, steamed carrots/greens/broccoli, roasted vegetables like green beans, zucchini, carrots... Ideas are only limited to you. :] You have plenty of options.
But I don't know how old you are (i.e. if you can drive to the store, if you have a job to spend money on fresh fruit/veg, etc.) so I really can't give you concrete recipes. More info from you would help all of us, but I hope this helped at least a little. <3

if you can convince her to throw in some steamed veggies (you can get frozen ones, they are just as good for you as fresh) then just eat more of those and then you can still eat a little bit of your mom's cooking. But try to skip when she makes boxed meals. Those are realllly high in sodium and saturated fats usually.
oh and an easy thing to cook for yourself, is brown pasta or rice (if you have a rice cooker).

fresh fruit, fresh vegetables and lean meat should be a good start. Potatoes arent necessarily bad, just like everything else you need moderation. Water and tea are good ideas instead of soda or juice. Juice is ok every now and again, just check the ingredient list to see what exactly is in it.
