So I just went to this anime convention and checked out a PokéParty to find I am out of the loop with this IV/EV training or whatever it is. Do I need to trash my party and start over with level 1 pokémon? o.o

There is actually a 3rd factor your forgot to mention: Natures. They are just as important. Unless your pokemon are maxed out at lv 100, then no you do not have to start all over. However, if they are lv 100 then yes, you will, because pokemon at lv 100 cannot obtain new EVs.

Just to clear out which is which: Effort Values are points a pokemon earns from defeating a certain pokemon. For example, defeat a Pidgey and get 1 Speed EV, defeat Gloom to get 2 SpAtk EVs.

Individual Values are stats that a pokemon is born with. Each stat can have a random IV ranging from 0-31. These cannot be changed or alternated. You just have to be lucky to obtain good ones. (Having parents with good IVs when breeding helps.)

Natures is another factor your have to pay attention to. Certain natures will take 10% from one stat and give it to another. For example, Adamant nature pokemon have 110% Atk, and 90% SpAtk. Timid pokemon have 110% Speed, and 90% Atk.

Natures and IVs are factors that a pokemon has as soon as they hard hatched or caught. EVs, on the other hand, you can train for. You just have to keep track of which EVs your pokemon has obtained. Each pokemon can have a total of 510 EVs, and 255 on each stat. Which means only two stats can be maxed out.

Ok then I do not understand what they do if I do not have to start over with new pokemon at level 1... sweatdrop

Also, shouldn't I start over anyways to get the correct natures?

That is your choice. If the pokemon already has a decent nature, then you can feed them berries to remove their random EV spread and you can then pick what EVs you want them to obtain.

Every 4 EVs adds +1 to your pokemon's stat. It is the difference between 275 Atk and 338 Atk. Give or take depending on the pokemon.

Stats don't increase each level?

That is a nature part of the game to gain stats as they level, but when you EV train they will obtain even more as they grow. For an example, if you were to train a high level pokemon, lv 70, obtained all the wanted EVs, then leveled them to lv 71 you will see atleast one stat jump by +48. At lower levels, you just have to know how many EVs were obtained to know if a pokemon is fully EV trained.

Browse www.serebii.net You might learn a few things.

I actually found this, plus I am more of a fan of Psypoke or Veekun over Serebii

Actually, it is now possible to give EVs to a level 100 Pokemon. Train it as you would any other Pokemon that you are trying to get EVs for, then put it in the PC and the EVs will automatically be added to its stat total. I have tried this and it does work. But you will still need to start from scratch for the right Nature/IVs.

Serebi has more reliable data than those sites. If you want to know what stat each pokemon has, go to Serebii's Pokedex. It tells you all you need to know about each pokemon. What its min-max stats are, what moves it learns and how, even what EVs they give. So, I high suggest switching over to Serebii.net

Don't listen to Luther, I've personally found TONS of inaccuracies on Serebii that it's only real use is for updated news. Your better off with Bulbapedia.

Maybe not movesets, but my skills are perfectly fine just by going off the PokeDex, game mechanics, and item locations.

Edit: It's whatever floats your boat. Some people use Bulbapedia, others use Serebii, and some use Smogon. Those seem to be the top 3 Websites.

I see, does Bulbapedia have the min/max thing too?

Ok so now that I have a pokemon with the right nature (idk about its IV?) I can worry about whatever this is... what is that? I have to fight certain pokemon and they do what? They give me specific stats or something?
