Does anyone know anything about Midoriko? I've looked around on the internet, but the only thing that's mentioned is that she died.

She died battling thousands of demons. she was a warrior a long time back. and because the demons were so overwhelming she sacrificed herself to save others. and when her body and the demons bodies combined it formed the shikon jewel, which includes her purity and the demons hatred. their spirits balance the jewel out.
