They don't use rings, it's their natural abilities. The rings we use are a concentrated version of the monster's power.
I believe this to be correct (or at least mostly so). The rings are created within the animated; much like an oyster creates a pearl. The rings have been collected and distributed (or gained in battle) to help fight against the animated monsters that seem to be immune to conventional attacks. I honestly haven't noticed a trend where specific rings come from specific monsters (such as the OMGWTF dropping
Scardy Cat rings dispite being able to scare people), but there might be something in the programming that I hadn't gleemed.
Overall, though, I think that this is mostly just part of the backstory to create an interesting and unique environment. Honestly, it wouldn't be all that different to have an enemy use a sword or gun to attack you in a different game, but yet you could use that same sword or gun to harm them back. In this case, it's just a matter of being limited to using these special rings instead of being able to grab our pitchforks and torches to run the animated out of Gaia...
