I'm having a hard time finding decent cookie recipes. I dunno, mine always come out dry and kinda icky tasting. Anyways, I did manage to find a fantastic recipe that uses chick peas.

Yep, that's right. Chick peas. In cookies.

Wet Ingredients:
2 tbs ground flax seed mixed with 1/4 cup warm water
1 banana
1 tsp vanilla extract
1 cup packed (8 oz) chopped dates
1/2 cup unsweetened applesauce

Dry Ingredients:
1 cup whole grain oats, ground
1 cup dry chickpeas, ground
1 tsp salt
1 tsp baking soda
1 tbs cinnamon (2 sticks ground)
1/2 tsp freshly ground nutmeg
1/2 tsp cardamom

Add-ins:
1 cup old fashioned oats
1 cup raisins
1 cup chopped walnuts

Preheat the oven to 350 degrees.
Mix the flaxseed and water together and set aside to thicken.

Combine the dry ingredients, set aside. (For the flours, make sure to pass through sieve to remove any unground bits.)

Combine the wet ingredients including the flax paste and mix until the banana is mashed and uniform.

Stir in the dry ingredients. Stir in add-ins to your taste (I used all three).
Line cookie sheet with parchment, spray lightly with pam. (Mine burnt on the bottom without the parchment.)

Use a quarter cup ice cream scoop to put dough onto the cookie sheet. These cookies don't spread in the oven, so flatten to about 3 inches across or desired size. Bake for about 10 minutes for flat cookies, 12 minutes for thicker ones. Makes about 15 cookies.

You know, you couldn't really tell at all. I tasted a bit, but I couldn't grind them very well. I quite enjoyed them - only downside that they were really, really moist. I can't win - my cookies are either dry and hard like brick or a soppy wet mess.

Peanut Butter Cookies

1/2 cup butter
3/4 cup sugar
1/2 cup peanut butter
1 egg
3/4 teaspoon soda
1/2 teaspoon baking powder
1 1/4 cups flour
1/4 teaspoon salt

Cream sugars, butter or margarine, and peanut butter. Beat in egg, then stir in remaining ingredients. Shape dough into a small balls; place on lightly greased baking sheets then press the dough balls down with a fork to make ridges down the center. Dip fork tines in flour the fork each time before pressing a cookie. Bake at 350° for about 12 minutes. (Bake for a little less time for chewier cookies.) Makes about 2 dozen peanut butter cookies.

Baking too much to use butter. Two batches of cookies and you've finished a $4.50 block of butter. Switched to olive oil, use less, much cheaper and I feel a superior end product. I've given out the two recipes below due to request - they're that good. Sugar has already been halved, so no need to further. (I seriously can't believe the amount of sugar recipes call for. It's really gross.)

Peanut Butter Chocolate Chip Cookies

1/4 cup + 2 tbps (90ml) olive oil
1/2 cup peanut butter
1 cup unpacked brown sugar (I use the darkest available.)
2 eggs
2 tbsp of maple syrup
2 tsp vanilla
2 1/2 cup flour
1 tsp baking soda
1/2 tsp salt
Approx: 1 cup of chocolate chips

- Preheat oven to 375 degrees F (190 degrees C).

- Cream together the olive oil, peanut butter, brown sugar until smooth. Beat in the eggs one at a time, then stir in the maple syrup and vanilla.

- Combine the flour, baking soda, and salt; stir into the peanut butter mixture. Fold in chocolate chunks.

- Bake for 12 to 14 minutes in preheated oven, or until edges are golden. (I use parchment paper on the sheets.)


Coconut Chocolate Chip Cookies

1 1/4 cups flour
1/2 tsp baking soda
1/4 tsp salt
1 1/3 cup coconut
1 cup (to taste) chocolate chips
1/4 cup + 2 tbsp (90ml) olive oil
2/3 cup dark brown sugar
1 egg
1/2 tsp vanilla

- Preheat oven to 350 degrees F (175 degrees C.) In small bowl, combine flour, baking soda, salt, coconut and chocolate chips. In large bowl, combine olive oil, sugar, egg, and vanilla.

- Mix dry ingredients with wet. You'll probably have to mix by hand. Cookies will seem dry, but undercook and they'll turn out okay.

- Bake for 8 to 10 minutes in the preheated oven.

What do you think about virgin coconut oil in place of the butter? I use it for pretty much everything and I bet it would be yummy.

What do you think about virgin coconut oil in place of the butter? I use it for pretty much everything and I bet it would be yummy.

I love coconut butter, but it's very expensive compared to butter and olive oil so I rarely use it. I'm sure coconut oil would make it as moist as olive oil and might give it a lighter taste. (Olive oil has a bit of a husky taste.)

Great recipes!
I'm excited to try the Coconut Chocolate Chip Cookies.
I don't however like to use olive oil when I bake. I use regular vegetable oil so as to avoid that husky taste.

I was curious if there were any rules when substituting oil for butter. Is it simply a 1:1 ratio or should you use less oil?

Coconut oil was the standard oil in cookies from the store for years, until someone decided that coconut oil wasn't a healthy oil----thankfully, that's over! I'm going to try baking some with coconut oil, I have never tried it!

Has anyone ever tried to make cookies out of cake mix?
I know it sounds a bit off, but I tried some the other day and found them to be a joygasm sweatdrop
