gamefreak41495 HP stands for Hidden Power. Hope that helps. Right. If a Pokémon has "HP - Grass" listed, then its Hidden Power is going to be the Grass-type, therefore Super Effective against Water, Ground, etc etc.

As already described by gamefreak and Nezu, "HP-Grass" means nothing more than "Hidden Power [Grass]". Obtaining said Hidden Powers of the desired type (and with a decent Power) on the other hand requires either tactical IV breeding or sheer luck.

Just to add up... Hidden Power is usually the last reasonable exit for a pokémon to have a wider coverture... let´s say... Gengar last chance to OHKO a scizor (without it being a suicide because of destiny bond), which will OHKO it with a bullet punch is to...
1 - Use a focus sash to survive 2 - Hit back with a Hidden Power Fire
Why that?... because gengar doesn´t learn any fire move to hit it back with the proper power (Fire punch?... nah gengar lacks any physical strength... will-o-wisp on the other hand will make scizor quite useless because of the attack drop... but won´t allow gengar to hit it properly)
Yes HPs has it´s flaws... the power varies from pokémon to pokémon... it can be around 30 in base power as it can be a maximum of 70 base power, also it´s power can be of a type you don´t need or it learns a better move of the type Porygon-z learns Ice Beam... 95 base power... why would you need a HP Ice with a max of 70 base power? or a lucario with Aura Sphere don´t need a HP fighting with 40 in power right?
Also... it´s a pain in the a** to get the right type and decent power (under 65 it´s a big no to me) the IV spreed has to be so damn precise it can be as kyrenx said... sheer luck... or 50-70 hours of breeding for a SINGLE pokémon...
But it also makes you feel in heaven once you get what you need Believe me a Zapdos with HP grass, the right nature and everything it needs to be able to switch in to a swampert (which usually stops it´s rampage over the enemy team)... has no price~
