I'm wondering if my opponent can activate sakiretsu armor or other kinds of traps on a ancient gear like ancient gear golem.

Anata wa watashi ga zutto mae ni "sayounara" to yutta hito wo omoidasaseru.
I'd say no, since you need to activate that while they're attacking.

hmmm, So since I can't activate trap cards until the end of the damage step that means it missed the timing for sakiretsu armor?

Yes, because Sakuretsu only responds to them while they're attacking.

that's what makes the ancient gear monsters so strong; their immunity to powerful traps like mirror force, widespread ruin and dimensional prison, and thats why i run an ancient gear deck XD

they're not immune...not by a longshot. They just don't let the OP activate traps while they attack.
Attack with a monster that doesn't have the negation effect and opponent chains MF to it; you're boned.

Well last year we busted a duelist with a ancient gear deck saying you can activate some traps due to some loophole on the wiki.
