There's only five behemoths in the Capital Wasteland and I've killed them all a couple of times.
There not that hard with the right weapons and tactics.

Cool, now the true challenge is how you killed them...me a 10mm and a fortunes worth of stim-packs...lol

Yeah there are five. As for killing them, I would suggest the Fat Man.

It's possible to kill at least 2 of them without even fighting them. So long as they die, you'll get the 360 achievement for it.
(Evergreen Mills and Capital building are the ones that are possible to have other people kill for you.)
But killing them yourself is most of the fun.
Personally, I killed them all the first time with a fat man. But I recently went through with few other files and had fun with them. (Hint: Melee weapons are not the smartest, but unarmed is effective if you have paralyzing punch)

I find the easiest way for me to kill them is punch them a couple times in VATS. My paralizing palm freezes them and they fall to the ground, and then I shoot it in the face a couple times with my shotgun ^^

For the record, the dart gun makes them slightly entertaining.
