If I'm training my tyranitar.. in 252 atk, 84 def/sp. def and hp. I only need to fight about 63 gyarados, and 42 geodudes, etc. right?.. or the whole 252 pokemon.

Look up EV distribution in the search bar.
Each pokemon gives off a certain number of EVs.
I'm too lazy to do the math, but what you said sounds about right.

I know what pokes give what ev's. But I hate math/I always trained them completly up to the number I'm training to. Hence it'd be all the way to 252 with macho brace, so I guess they'd get 504 ev's or something doing that.

With the Pokerus Virus and Macho Brace, each pokemon will get 4 times their original EVs. Example: Geodude would give 4 Def EVs, and Gyarados would give 6 Atk EVs. The best way to keep trace of how many EVs your pokemon currently has is to mark them down on paper.
Btw, each pokemon gets a max of 255 EVs per state, and 510 EVs total.

Im too lazy to mark down how many pokemon ive trained against, so I just use pokemon that can kill them in one hit and so I just look at how much pp I have used to keep track of how many EVs I have trained...it's an okay system.

One thing with the virus after the Pokerus thing is gone dose the pokemon still have the effect of pokerus?
