I'm from a prominent Irish family who sold their lands and title to pay for their serfs to come to America during the famine.....and now, childless, I am the last of my line. this recipe for colcannon was passed down through the generations in-familia only, but...I can't bear for it to end w/ me. SO - why not share with those I hold dear on Gaia?so here it is:
FIANNAN COLCANNON
(these ingredients are per person, so 2 servings require 6 potatoes, etc...)
3 red potato
1/4 green cabbage head
5 pinches white pepper
2 tablespoons of butter(not the fake stuff)
1/3 cup milk
1 tablespoonful of cream
Finely chop the cabbage and place in the pot with just enough water to cover.
Add peeled and cubed reds, Place a lid on the pot and boil until soft.
When the reds are "crumbly" but not disintegrating strain thoroughly and place in a large enough bowl.
Add butter and pepper then mash the green-tinted mix until the large bits of butter are melted.
Pour in the milk while stirring until "fluffy".
Serve with a dollop of cream on top.
