Yes, Zaftig Chazzah means "Oversized Glutton" in Yiddish. But I think it's appropriate for the great big ooey gooey jewey kablooie food thread.

This isn't the recipe trading section, this is for us to plan menus for holidays, ask questions about food, nutrition healthy diets, historic facts about things, differences between kosher style and kosher la pesach.

Hmm, turkey day is coming up. Lets see what I have planned

Roast Turkey Breast (you know they sell them without dark meat now!)
Mashed Potatoes
Peas in Pearl Onions
Cornbread
Celery and Mushroom stuffing
Cranberry Sauce

what you guys planning?

What you're having sounds pretty OM NOM NOM! I'm going to my grandparents house, so I have no idea what we'll be having. I just hope there's not a lot of trayf!

Thanksgiving, the day where Americans coast to coast, fill their bellies with turkey and watch football to commemorate... something? I dunno really, killing off all the natives in the area to build their communities, mass commercialism, gluttony, I really couldn't tell you why we celebrate it now, we just do it for tradition.

I'm going to my mum's for it, so I really dunno what I'm having. From past experience, though, we normally have turkey, cranberry sauce, mashed potatoes, stuffing, etc.

We'll probably do stuff differently, since there's Europeans in the family now. Not sure how that'll effect it.

So what about mixes of Jewish and Italian food? Pizzas with pickled fish? Matzo ball gespatcho?

My Thanksgiving menu:

Main dish:
Turkey with oregano, garlic, zaatar, lemon, scallions (Middle Eastern style)

Side dishes:
Batter bread with corn (like cornbread, but moister and softer - this is pure Soul Food)
Fried garbanzo beans with herbs, dried fruit, and pomegranate garnish (Arab food -- if it's not fried, this is a very common dish to serve after nightfall during Ramadan)
Spinach salad with apples & carmelized crispy onions (Italian)
Israeli salad
Cranberry relish (NOT cranberry sauce -- cooking kills the vitamin C and the flavor)

Desserts:
Sweet potato pie, plus two gluten-free servings (crustless)
Coca Cola cake
Baked apple with topping of caramel So Delicious (soy ice cream)

Drinks:
Cranberry sparkle (seltzer or Sprite with a shot of cranberry juice)
Coffee served with dessert

I forgot to include my appetizers and desserts... And I wouldn't say it's a 1-up, but it's definitely more health conscious. I just happen to be a black sheep in a family of picky eaters who likes to experiment with food. I still have to convince my mother that letting the turkey soak in brine for a day will make a better turkey, or my father that a deep fried turkey is a great thing indeed, or my sister that processed food isn't bad for you or my brother that things that are green are not actually going to kill him. Yeah 34 years old, still won't eat his greens.

However, being saddled with them all, I am forced to keep it simple.

However wait until February when I start posting my dinner party menu.

We might actually have a thanksgiving this year. Normally, we go to the beach. I hope we have turkey. I can't remember the last time we had turkey.

Heh, you must know my sister.


Ok true, Vitamin C is a highly volatile substance, it dissolves into water above 70 degrees and is will oxidize, which is why things like apples and artichokes brown so quickly.

HOWEVER... Vitamin C that dissolves into water, stays in the water that it's dissolved in and doesn't oxidize as readily.

Cranberries has enough acid and pectin to gel on it's own. Cooking them down reduces the water content and adding sugar will help promote gelling, but so long as you retain the liquid you will keep most of the vitamin C within the final product.

The vitamin C stays within fruit so long as the skin stays intact, I would contend that cranberry sauce has better nutrition simply because to make a cranberry relish, you throw cranberries, apples and oranges into a sausage grinder and come out with macerated fruit.
